This recipe for a baked beans and wieners, I got from my mom’s cookbook from the 1970’s. It’s a sweet baked bean similar to Libby’s Baked Beans from the ‘80’s. Before I moved out, in the late 1990’s, I wrote down a bunch of my favorite recipes as well as ones I wanted to try onto recipe cards and placed them in my recipe box I had since junior high. I cannot believe I’ve had this recipe for 25 years! I thought this simple meal sounded delicious and would be an affordable option!
So, since we are cooking with ingredients we have on hand, for our No Grocery Shopping Challenge, I decided this meal would be a great way to use up some canned beans and hot dogs from the freezer. This whole meal cost $5.99 to make which is awesome, especially when times are tough plus it is simple to prepare (so easy it would be great for kids to help make), and tastes delicious too! My girls absolutely loved it!
Let’s get started!
This is a one pot meal! Toss everything into a casserole dish. Dump 2 small cans of pork & beans into the casserole dish. Add chopped wiener or sausage, mustard, ketchup and brown sugar. I added some chives as well. I didn’t have tomato soup so I used tomato sauce that had leftover in the fridge. I didn’t have Worcestershire sauce so I used soy sauce instead.
Stir well. Place in oven. Bake at 350F for 45 minutes. Stir and bake for another 45 minutes.
Remove from oven and stir. Let cool slightly before serving.
Simple yet yummy. I like baking it longer because I find it tastes better, giving the flavors a chance to meld when it cooks for an hour and a half compared to only cooking it for 30 to 45 minutes.
I served it with sautéed zucchini and English Muffin Bread — so good!!
