We have been baking a few different foods from different cultures and have t has been fantastic! We have been learning a lot and it’s interesting to read a bit of the history of what we’re making! Today we are making Welsh Cakes.
Welsh Cakes are also known as Bakestones (because they were baked on a stone) and are a sweet bread from Wales that originated in the 1800’s. It was often cooked on a griddle over the fire or on the cook stove. They are best served fresh with jam or butter and sprinkled with a little sugar. They are similar to a scone and quite delicious.
Let’s get started!
Crumble butter into flour. Add baking powder, baking soda, salt, sugar, raisins and the egg. Mix to form a dough. Add milk if needed to bring dough together.
Roll out pastry 1/4” thick. Cut into rounds with a 3” fluted cutter. That’s a cutter that has ruffled edges. I used that type of cutter though you can’t quite see it.
Cook in a heated, lightly oiled griddle or pan.
Cook two to three minutes before flipping. Be sure it is a golden brown on each side. I had my heat a bit too high so I had to cook them a little longer until they cooked through. They’re a bit dark but at least they’re not bitter from being overcooked!
Sprinkle with sugar. We put some in sugar, and left some plain. They’re delicious either way!
You can serve with jam or butter.
