I have been making this yummy casserole for over 20 years. I had some tortillas to use up and cooked up ground beef, added corn and beans and tossed it in between layers of tortillas, cheese and salsa. I changed it up a bit over the years, but it still tastes the same — super delicious and a meal that doesn’t last long! Anytime I have served it, everyone has always enjoyed it!
Some call it Mexican Lasagna but my girls grew up calling it Tortilla Casserole!
Let’s get started!
First, we are making the filling. Brown ground beef with onions. Season with taco seasoning, garlic, 3 onion seasoning and salt and pepper.

Add corn and shredded carrot. Cook until carrot is tender.

Add black beans.

Add salsa, tomato sauce and taco seasoning. Stir well. Cook for 5 minutes. Turn off heat and let cool slightly.

Put a couple spoons of tomato sauce on the bottom of a casserole dish. Sprinkle with taco seasoning. You can also use salsa. Shred cheese.

Over sauce in casserole, place tortilla, shredded cheese, another tortilla, 1/3 meat mixture, shredded cheese tortilla and then repeat twice.















Sprinkle with taco seasoning. Bake at 350F for 45 minutes.

Let cool 10 minutes – it’ll be easier to slice!

Serve with sour cream or yogurt, shredded lettuce, salsa, avocado or guacamole or chopped tomato.

1 lb ground beef
1 onion, diced
1 tsp taco seasoning
2 cloves minced garlic
1/2 tsp 3 Onion
Sprinkle salt & pepper
1 cup corn
1/2 cup shredded carrot
1 cup black beans, drained and rinsed
1 cup salsa
1 cup tomato sauce
9 large tortillas
2 to 3 cups shredded cheese

Add salsa, tomato sauce and extra taco seasoning. Stir well. Cook for 5 minutes. Turn off heat and let cool slightly. Put a couple spoons of tomato sauce or salsa on bottom of casserole dish. Over sauce in casserole, place tortilla, shredded cheese, another tortilla, 1/3 meat mixture, shredded cheese tortilla and then repeat twice. Sprinkle with taco seasoning. Bake at 350F for 45 minutes. Let cool 10 minutes before slicing. Serve with sour cream or yogurt, shredded lettuce, salsa, avocado or guacamole or chopped tomato.
