If you enjoy a lightly spiced pumpkin muffin or loaf with a sweet sugary topping with your morning coffee, you’ll love this snickerdoodle pumpkin loaf!
This moist loaf has layers of cinnamon sugar and is packed with flavor that makes every bite delicious!
Instead of making a loaf, we decided to use a brownie pan so each mini loaf is an individual serving, but you can easily use a muffin pan or mini muffin pan too!
Let’s get started!
Combine pumpkin, egg, granulated sugar and brown sugar, melted butter, pumpkin pie spice and vanilla.
Stir well.
Add flour, baking powder, baking soda, and salt.
Stir until combined.
Combine granulated sugar and cinnamon together. Pour batter into a greased loaf pan, and pour sugar over top. Use a knife to swirl the sugar in. Bake at 350F for 45 to 55 minutes or until toothpick inserted in centre comes out clean. If it springs back when lightly touched, it should be cooked.
Today, I am using a brownie pan but you can also use a muffin pan. Be sure to grease the pan. Spoon batter into pan, sprinkle with sugar, spoon more batter on top and sprinkle with more sugar. Since my brownie pan is a bit larger, we had to double the batter.
Look at that sweet goodness!! Bake 350F for 25 to 35 minutes or until toothpick inserted in centre comes out clean. If it springs back when lightly touched, it should be cooked.
Smells divine!! Let cool for 10 minutes before removing from pan.
Goes great with pumpkin spice latte or pumpkin hot chocolate!
Snickerdoodle Pumpkin Loaf
1/2 cup pumpkin
1 egg
1/2 cup granulated sugar
1/4 cup brown sugar
1/4 cup oil
1 tsp vanilla
3/4 cup flour
1/2 tsp baking powder
1/4 tsp baking soda
1 tsp pumpkin pie spice
1/4 tsp salt
Cinnamon Sugar
1/4 cup granulated sugar
1 tsp cinnamon
Scoop even amounts of batter into prepared pans. You can use a loaf pan, mini loaf pans, brownie pan, muffin pan or any pan you like. Be sure to lightly grease the pan.
Spoon a generous amount of cinnamon sugar over the batter and swirl it in with a butter knife.
Bake at 350F until cake tester inserted in centre comes out mostly clean – about 25 to 35 minutes for the brownie, muffin or mini loaf pans or 45 to 55 for a regular loaf pan. Let cool 10 minutes before removing from pans.
