The crockpot or slow cooker is an awesome way to have a delicious, hearty meal without having to cook all day! You can come home from your busy day and enjoy a yummy meal. And if you toss the veggies in along with the meat, then you have a full meal ready to eat, just serve a salad alongside it. I love using my slow cooker — it makes the most tender meat, especially if you are using a tough cut and the veggies are cooked wonderfully.
Let’s get to it.
In your slow cooker, toss in onion, carrots and potatoes. You can also add parsnips if you like. I leave the carrots and potatoes quite large. Toss in as much as you would need to feed your family.
Season the veggies.
Place roast beef over top and season well. I love using dill on roast beef. I remember having roast beef at my gramma’s when I was young and it was always seasoned with parsley and dill. The smell of the roast beef cooking with those seasonings takes me back to that time, and I absolutely relish in those memories plus the flavor is simply delicious.
If you would rather toss the roast beef in the roasting pan with the potatoes, carrots and onions, and cook it in the oven, you can totally do that as well.
Put 2 cups water in and 1 cup beef stock or beef broth. Place lid on. Set crockpot on low for 8 to 10 hours or on high for 6 to 8 hours.
Mix 1/4 cup water with 3 tbsp cornstarch together. Drizzle in and stir well to create a gravy. I grew up with having potatoes, carrots, roast beef with gravy — you could never have roast beef without a flavorful gravy with it. Turn on high and place lid on for gravy to thicken.
Yum! Does that not look like a hearty and delicious meal!?! It is lovely to come home to a home cooked meal after a long busy day and it only took minutes to prep! You can also prepare the veggies and roast, place in fridge and the next morning you just have to toss it into the crockpot and it will cook all day long.
Delicious. Hearty. Old fashioned yumminess!
Slow Cooker Roast Beef with Veggies
Place chopped onion in bottom of crockpot.
Chop carrots and potatoes into large pieces. Scatter in crockpot.
Season with salt and pepper.
Place roast beef over top. Season with your favorite seasonings. I especially like dried dill, parsley, garlic and fresh cracked salt and pepper.
Add in 2 cups water and 1 cup beef broth or beef stock. Cook on low 8 to 10 hours or on high for 6 to 8 hours.
Mix 3 tbsp cornstarch into 1/4 cup water. Drizzle into liquid in crockpot, stirring well. This will create a gravy. Cook on high for 20 minutes.
Serve with salad.
