This simple homemade sausage is similar to the old fashioned sausage patties we make. This simple sausage is not like a typical sausage recipe because there’s no cure, it’s not smoked, and it’s not pressed into a casing. Instead we form the sausages by hand and it is just cooked in the oven.
Let’s get started!
We are using ground pork.
I measured out about 1 pound of ground pork. I tossed in crushed saltine crackers, egg, salt and pepper and seasonings of choice. In one batch I used Italian seasoning with garlic, and one batch has sage, parsley and green onion.
Mix well.
Form into sausages. Freeze for up to 3 months or cook fresh. I like to freeze for at least a couple days because I find the sausages to be more flavorful but I have cooked fresh too. Either way, it tastes great. If I am cooking from fresh, I always make them the night before.
I placed the sausages in a roasting pan with a bit of oil and a splash of water. I covered the roasting pan.
Bake at 350F for about one hour.
Let cool slightly before slicing.

Simple Homemade Sausage
1 lb ground pork
1 egg
1 to 2 green onions, diced
1/4 cup saltine crackers
1/2 tsp salt
Fresh cracked pepper or 1/4 tsp ground
1/4 tsp sage
1 tbsp parsley
You can also omit the sage and add:
1 to 2 garlic cloves, minced
1/2 tsp thyme or 1/2 tsp Italian seasoning
Mix altogether and form into sausages. Freeze or cook fresh. Bake at 350F for one hour or pan fry until browned and cooked through.
