We enjoy an assortment of sandwiches, especially when it is hot out and no one feels much like eating or cooking. We have sandwiches with vegetables and dip, homemade sweet potato fries or homemade wedges or fries, or even chips. I like sandwiches because everyone can put on their favorite toppings! Sometimes we use homemade bread, either fresh or lightly toasted and sometimes store bought buns if we are too busy or it is simply too hot out to turn the oven on. Even garlic bread tastes great with a chicken parmesan or philly cheesesteak sandwich. No matter what kind of bread or toppings you use, these sandwiches will be a summer fave for sure!
The sandwich was first created in England by John Montagu, the 4th Earl of Sandwich in 1762 when he asked for salt beef to be placed between two pieces of toasted bread to enjoy during their cribbage games. Sandwiches evolved over time and became more popular in the 1930’s since sandwiches were a cheap way to feed a family. I thought that was quite interesting when I was reading about the history of sandwiches. It’s amazing to see what sandwiches are like today!

Chicken Salad or Tuna Salad Sandwiches
If you are using canned chicken or tuna, drain well and dump into a bowl. If you are using cooked chicken breast, be sure to chop the cold cooked chicken into small pieces. Add mayo, salt and pepper, chives or chopped green onion, a sprinkle of fresh dill or dried dill and shredded cheese. Stir well. We usually toast the bread, but you can use fresh bread as well or buns. Put your favorite sandwich toppings on like lettuce, cucumber and tomato. Store any leftover chicken salad or tuna salad in the fridge.
With cooked, chopped chicken breast, I often like adding mayo, yogurt (or sour cream if you like), shredded cheese, bacon crumbles, green onion or chives and a sprinkle of onion powder. Stir well and put on your sandwich with lettuce. Super yummy!
Chickpea Salad Sandwich
Drain one can of chickpeas and rinse well. My family loves this salad so much I often use two large cans of chickpeas, but you could cook dried chickpeas too. Slightly mash the chickpeas. Add mayo, yogurt (or sour cream), diced celery, diced dill pickle, salt and pepper, chives or chopped green onion, a sprinkle of fresh dill or dried dill, 1/2 a large shredded carrot, 1 to 2 tablespoons of dill pickle juice and shredded cheese. Stir well. We enjoy this chickpea salad on toast or fresh bread, but you can use tortillas, pitas or buns. It’s super delicious any way! Add your favorite sandwich toppings to your sandwich like cucumber, lettuce or sliced tomato.
To switch up the sandwich a little, change your spices! Add dry ranch seasoning, taco seasoning or even everything bagel seasoning.

Pulled Chicken or Pulled Pork Sandwiches
We love pulled chicken sandwiches, but this works well with pork or beef as well. I toss the chicken, beef or pork roast into the crockpot. I season with bbq seasonings, salt and pepper and bbq sauce. Set on low for 8 hours or on high for 6 hours. In the last hour of cooking, I shred the meat, add sliced onion and sliced bell peppers, place the lid on and cook on high for 1 hour. Then toast the bread, add cheese and the shredded meat. Serve with coleslaw.
Leftover Chicken Parmesan Sandwich
Leftovers make a delicious sandwich too! Toast the buns, place a spoon of warm marinara sauce (or any pasta or pizza sauce) on the toasted bun, place a slice of mozzarella on with a sprinkle of parmesan cheese. You can lightly broil this if you like before placing the reheated chicken parmesan on. Serve as is because this sandwich is quite filling but it goes great with fries as well.
We often like to make pizza fries — to the cooked fries, add pizza sauce and cheese and broil until lightly golden and cheese is bubbly then add chopped green bell pepper, black olives and shredded cheese. Super delicious!
Philly Chicken Cheesesteak Sandwiches
Cut raw chicken breast into pieces. I usually use about 1 lb of chicken. To the chicken, add a drizzle of oil, sliced onion and sliced bell peppers. Then toss philly cheesesteak seasoning on with salt and pepper and let marinate for 20 minutes. Dump onto a baking sheet and cook at 350F for 30 to 40 minutes or until chicken is cooked through. Sprinkle with shredded cheese and place in oven until the cheese is melted. Scoop cheesesteak filling on toasted buns and serve with homemade sweet potato fries. You can also make this delicious sandwich with beef instead of chicken.
Philly Cheesesteak Seasoning
1/2 tsp salt
fresh cracked black pepper
1/2 tsp paprika
1/2 tsp chili powder
1/2 tsp onion powder
1/2 tsp garlic powder
1/4 tsp cayenne
1 tsp Italian seasoning
Mix seasonings altogether. Store in a jar. Sprinkle onto chicken or beef and onions and bell peppers. Use as much or as little seasoning as you like.
