Anytime we are craving fajitas, I make this quick and easy bbq chicken! No having to stand at the barbecue — especially when it’s cold out — toss everything into a roasting pan and bake.

In my roasting pan or casserole dish, I tossed in a sliced onion, shredded or julienned carrots and chicken breasts.
I make a simple bbq sauce using ketchup or tomato sauce, add bbq seasonings of choice, stir it up and toss onto the chicken. Of course you can use any bbq sauce you like. I use smoky bbq seasoning, smoky applewood, Carolina mustard Korean bbq seasoning and 3 onion. I add a bit of 3 onion on top the sauce as well as salt and pepper. You can also add sliced bell peppers half way through cooking.
Bake at 350F for 1 to 1-1/2 hours. Shred chicken. Ready to serve on rice or tortillas with lettuce, cheese, chopped bell peppers and any other of your favorite toppings. This makes great nachos too. It’s so delicious!
Quick and Easy BBQ Chicken
1 onion, sliced
1 to 2 carrots, shredded or julienned
3 to 4 chicken breasts
Bbq sauce of choice
Salt and pepper
Toss onion and carrot in roasting pan. Add chicken. Pour on bbq sauce. Add seasonings. Bake at 350F for one to one and a half hours. Shred chicken. I pull it apart with forks. Serve on rice or tortillas with lettuce, cheese, chopped bell peppers and any other of your favorite toppings. This makes great nachos too.
