We have been making these quick and easy apple cookies for a few years already and are something we enjoy regularly. Although technically, these are not really a cookie, they are delicious and taste like you are having a treat.
We have been calling them apple cookies for quite some time because they are round and sweet, shaped somewhat like a cookie and simply because its a catchy name! Anytime I asked my kids if they wanted “apple cookies” they knew exactly that meant they would have apples with a seed butter like sunflower seed butter or wow butter (soy-based) or almond butter and often we would each top our “apple cookies” with our favorite toppings. It is super simple to prepare and children and kids of all ages love them!

For these delicious apple cookies, you can use any apples you enjoy. We have made them with an assortment of apples like ambrosia, spartan, gala or honey crisp apples and they always taste delicious! Wash the apples. You can also peel them if you like. These work great with apples harvested from the yard and we enjoy these apple cookies year round.
Slice the apple into thick pieces.
Remove the core. I use an apple corer which is much easier! You can also use a small cookie cutter.
Time to top those apples! Spread your favorite nut or seed butter over top. This may be a little tricky, so drying the apple slightly with paper towel makes spreading the nut/seed butter much easier. For added protein, you can mix the nut/seed butter with a high quality protein powder before spreading onto the apple. Top with your favorite toppings like pumpkin seeds, sunflower seeds, chopped nuts, mini chocolate chips, toasted coconut, raisins, dried cranberries, dried fruit, and so on.
These are perfect for snacks or dessert and goes great in packed lunches or picnics and is a tasty, healthier treat!
Apple Cookies
Favorite apples – 1 per person
Favorite nut or seed butter – half to 1 tsp per apple piece
Favorite toppings like pumpkin seeds, sunflower seeds, chopped nuts, coconut, mini chocolate chips, toasted coconut, raisins, dried cranberries, dried fruit, and so on
Wash apple or remove peel if you like. Pat apples dry. Spread nut or seed butter over top. Sprinkle with your favorite toppings and enjoy.
