This yummy meal takes me back to my childhood. When mom would ask us what we’d like for supper, my brothers and I often asked for “the potato and gravy with meat stuff.” We’d dish it up, blob on a little ketchup before we’d eat.
I wrote this recipe down in my recipe box when I was a teenager because it was always a favorite of mine. It’s delicious! It’s like a beef stew without all of the vegetables — simple and easy to make.
You could also cook this in a slow cooker/crockpot and I’ll share how to do that below. I cooked it all afternoon in the oven and it turns out great every time! And it tastes like my childhood! This meal cost $7.54 to make and served my family twice ($1.26 per serving). We saved a bit of money by using potatoes from our garden which is fantastic!! I cooked peas as well and we had it with English Muffin Bread. Yum!
Let’s get started!
I often brown the steak that has beef dredged in flour, but this time I took the frozen beef and tossed it in my casserole dish. I am using a piece of roast that was chopped for stew. I then added one cup beef broth and 1 cup water. I seasoned it with salt, pepper and dill. Place lid on and cook in the oven at 350F for one hour.
After one hour, add onion. Add 1 cup beef broth and 1 cup water again. Cook for 2-1/2 hours.
Add potatoes. I added about 4 cups sliced potatoes. Add 1/4 cup water mixed with 2 tbsp cornstarch. Stir as you pour it in because otherwise pouring cornstarch into a hot liquid will clump. Place lid back on and cook until potatoes are done. I cooked it for one hour.
Remove from oven, remove lid and let cool slightly before serving — it’ll be very hot!
I love making one pot meals — less dishes!!

My updated version
Beef stew meat – I used a piece of beef that I cut off of a large roast
2 cups beef broth
2 cups water
1/2 tsp salt
Sprinkle pepper and dill
1 small onion, chopped
4 cups sliced potatoes
1/4 cup water mixed with 2 tbsp cornstarch
Toss beef into casserole. Add one cup beef broth and 1 cup water. Season with salt, pepper and dill. Place lid on and cook in the oven at 350F for one hour. Add onion, 1 cup beef broth and 1 cup water again. Cook, covered, for 2-1/2 hours. Add potatoes. Add 1/4 cup water mixed with 2 tbsp cornstarch. Stir as you pour. Place lid back on and cook until potatoes are done, about one hour.
Crockpot
Place beef, onion, potatoes, broth, water, seasonings and cornstarch in crockpot. Place on low for 8 to 10 hours or on high for 4 to 6 hours.
