Potato Scones (also called tatties scones) are an old fashioned, traditional Scottish flatbread made with leftover mashed potatoes. Potatoes were encouraged to be eaten in the UK because potatoes could be grown right there and did not need to be imported. The Ministry of Food published “Food Fact” leaflets that included information and recipes! I think we need these pamphlets today!

Let’s get to it!
Combine flour and mashed potatoes with salt, and baking powder.

Mix well, adding milk if needed to create a dough.

Roll into a ball. Place on floured surface.

Carefully roll out dough. Cut into circles. Continue to do so until dough is gone.

Put lard or oil in skillet. Place scones in and cook until golden brown, about 2 minutes.

Flip and cook until golden. Continue until all scones are cooked.

Serve warm with butter.

These are delicious and something I’ll definitely make again when I have leftover potatoes.

This is what we had with the scones — potatoes 3 ways – potato scones, baked potatoes and mashed potatoes fried in onion & bacon and we had mock goose as well. It was all so delicious!
