My family loves all sorts of soups, any time of the year. Soups are an easy way to feed a large family. You can easily add extra vegetables or even stretch it out by adding more broth or water. You can turn a soup into a stew just by thickening the broth and adding dumplings or homemade drop noodles. Soups are budget friendly and this yummy potato and onion soup needs just onion, potatoes, broth and some seasonings to make a yummy meal! I add wine because I like the flavor the white wine gives the soup plus it cuts the harshness of the onion and I cook it a bit longer to be sure the alcohol cooks out, but you can totally omit it and add a splash or two of white wine vinegar.
Let’s get started!
Slice onion. Place in soup pot with 1 tbsp oil and a splash of water. Cook until onion is tender, about 15 minutes. I used about 1 pound of onions.
Once the onions are tender, add sugar and cook a few minutes. You can cook until golden but I just cook until soft, about another 20 minutes because these onions were still a bit too crunchy.
Once onion is done to desired doneness, add flour and stir. Cook a bit until flour is absorbed. We also need to cook the flour out so it does not have that floury taste. Stir constantly so it does not burn.
Add beef broth or beef stock and salt. Place lid on and cook, about 15 minutes, stirring occasionally. Bring to a boil.
Time to add sliced potatoes. I cut the potato in half and sliced thin.
Now that the soup has come to a boil, add potatoes and one bay leaf. Cook 20 minutes.
Add dry white wine.
I simmered the soup for 40 minutes, then turned off the heat. We let the soup sit for 20 minutes while the bread baked.
The soup smells divine. We always have some type of bread, bun or biscuit with soup. If you wanted, you could place the soup in an oven proof dish and add french bread and cheese on top. You could also toast bread with cheese and then place it in your bowl of soup.
We ladled the soup into our bowls, added some shredded cheese and ate it with bread on the side. It is super delicious.
The soup is yummy with or without cheese on it. This is one of my favorite soups!
Potato & Onion Soup
1 lb (about 5 cups) onions, thinly sliced
2 tbsp butter
2 tbsp oil
1 tsp salt
1/4 tsp sugar
3 tbsp flour
1 quart beef stock or beef broth
1 quart water
4 cups sliced potato
1/2 cup dry white wine – I used a Sauvignon Blanc
Sauté onion in butter and oil until tender. Add salt and sugar. The sugar will help brown the onions. I just cooked the onion until translucent and cooked through. Add flour. Stir until flour is absorbed. Add water and broth/stock. Add more if needed. Cook 20 minutes. Add potatoes. Cook 15 minutes. Add wine and simmer another 30 minutes. Let stand 15 minutes before serving.
