This apple cider is a delightfully spiced drink that warms the soul on a chilly fall day!!
I thought mint, cinnamon and apple was an odd combination but it’s actually quite yummy and the combination works well.
It has a light mint flavor — I add extra fresh mint to my cup of warm cider to make it a bit more minty. I simply love fresh mint. We use homemade mint extract which does not have that fake toothpaste mint taste so it is not as strong as store bought extract. You can add more or less to your taste.
This is super simple to prepare and tastes delicious whether apple cider or apple juice is used. If using apple juice, leave it simmer a bit longer.
Let’s get started!
Toss apple cider or apple juice into a pot with the sugars, cinnamon sticks and we also added a pinch of ground cinnamon. Bring to a boil.
Once sugar is dissolved, add mint and simmer for 30 minutes.
Remove mint and serve while hot. So yummy on a cool fall day!
Peppermint Apple Cider
6 cups apple cider or apple juice
1/4 cup fresh mint leaves
1 to 2 cinnamon sticks
1/4 cup brown sugar
1/4 cup granulated sugar
1 tbsp homemade vanilla or 1 tsp store bought vanilla
1 tsp mint extract — I used homemade so I used 1 tbsp
Combine everything in a pot. Bring to a boil, stirring until sugar is dissolved. Reduce heat and simmer for 30 minutes. Serve warm. Tastes great cold too!
