Pioneers often started their morning with a hearty breakfast like pancakes which were simple to make. Pancakes could be made quickly in the morning, so everyone could get on with their busy day. Since bread took a while to make, it was preferred for dinner or supper instead of breakfast, so the women had all day to prepare and bake it.
Homemade pancakes are delicious. Fluffy pancakes are even better! They take few ingredients and are an affordable way to feed a hungry family. My family loves pancakes. I make a variety of kinds with a variety of flours, whole wheat being our favorite. I have even made this recipe with a gluten free flour blend with great success! I make them with sourdough and without.
This pancake recipe is so versatile — you can add chocolate chips, blueberries or eat them as is. You can serve them with homemade jam or whipped cream, or butter with syrup. The options are endless! Any which way you enjoy your pancakes, they are sure to be delicious!

Prepare the batter. Toss the dry ingredients in the bowl and give it a good stir. Add the egg, water, oil and vanilla and stir well. If the batter is too thick, add more water. If the batter is too thin, add more flour. Thicker pancakes will take a bit longer to cook through.
Spoon batter into a heated, greased pan. Once golden, flip and brown on the other side. Remove from pan and continue until batter is gone.
Serve with your favorite toppings. These are delicious for breakfast and taste just as yummy served for supper! I know we enjoy breakfast for supper sometimes — it is just the best comfort food, quick, easy and perfect when no one feels much like cooking!
Mom’s Homemade Fluffy Pancakes
1-1/2 cups flour
1-1/2 tsp baking powder
3 tbsp sugar
1/2 tsp salt
1 egg
3 tbsp oil
1 tsp vanilla
1 cup water
Combine flour, baking powder, sugar and salt together. Add egg, oil, vanilla and water. Stir well. Add more water if needed. Pour by spoonfuls onto a heated, greased skillet or griddle. Cook until edges are browned and bubbles pop on the surface. Flip and cook other side until browned. Remove to plate and continue until batter is gone. Serve with homemade jam, syrup and any other toppings you enjoy. Store leftovers in an airtight container in the fridge. To reheat, place in toaster, microwave or heat in a skillet.
