Hearty soups are a simple way to feed a hungry family and an easy way to stretch some vegetables. Not only did this pot of minestrone soup serve my family, but we shared with a couple friends and we still had leftover! It’s a filling, nourishing soup paired with fresh bread makes a wonderful meal, definitely filling a hungry tummy!
Since we are making this during 1940s Days, I am using vegetables that we have on hand. It’s such an easy way to feed a family! If you have a large family, simply add more vegetables and beans along with additional water or broth.
Let’s get started!
Toss onion, celery, carrot, zucchini into a pot with salt and pepper, rosemary, Italian seasoning and Greek seasoning.

Cook until onion is tender.

Add potatoes, kidney beans, tomato sauce and water or stock. Cook 20 minutes.

Add a couple handfuls of pasta. Cook about 8 to 10 minutes or until pasta is cooked. Add more water if needed

Taste for seasonings and add salt or spices as needed. I always taste part way through and add if needed.

Soup is ready! I always let it sit about 10 minutes before serving because it’s simply too hot!

Yum! You can stir in chopped spinach at this point if you like.

I always serve with Parmesan cheese and parsley. Serve with fresh bread.

Minestrone Soup
1 onion, chopped
2 celery stalks, diced
1 carrot, diced
1 small zucchini, diced
1/2 tsp salt
Fresh cracked pepper
Sprinkle dried rosemary
1/2 tsp Italian seasoning
Sprinkle Greek seasoning
1-1/2 cups potato, chopped
1 cup kidney beans
1 cup tomato sauce
4 cups water or stock/broth or enough to cover the vegetables
2 handfuls pasta, about 1 cup
1 to 2 cups spinach, chopped – optional
