We often have vegetarian meals because my family enjoys them, and this lentil cabbage roll soup is a hearty and filling soup. It tastes like a cabbage roll in a bowl! It’s so warming and delicious!
Lentils are a great meat alternative much like beans, and are high in fibre, minerals and antioxidants, not to mention budget friendly! I find lentils to have a neutral flavor, so it’s easy to add them to any meal — they’ll take on any seasoning too making lentils quite versatile! I really enjoy cooking with lentils, especially dried lentils which are simple to prepare!
Let’s get started!
First we will get the lentils cooking. Rinse lentils well. I cook 1 to 2 cups and save half for another meal. Cover with water and add 1 tsp salt. Bring to a boil and simmer for 30 minutes or until tender. Turn off heat and let sit 10 minutes. Drain any excess liquid.
Toss 1 chopped carrot and 1 diced onion to a soup pot.
Add seasonings. I am using salt, pepper, dill and a bit of Italian seasoning. Add 1 tbsp oil or bacon grease. Sauté until onion is tender. You can also add other veggies like parsnip, celery or mushrooms.
Once the onion is tender, add cabbage. I am using about 4 cups of sliced cabbage. You can add as much or as little as you like. I add a splash of water to help steam the cabbage.
After about 5 to 8 minutes, add tomato sauce. You can also add tomato juice or V8. I used tomato sauce.
Stir.
Add lentils. You can add as much as you would like. I added 1/2 cup. You can also add cooked ground beef instead of lentils or even meatballs.
Stir. Bring to a boil. Cook 20 minutes. Taste. Adjust seasonings if necessary.
Add 2/3 cup peas. Cook 15 minutes.
Here’s our hearty lentil cabbage roll soup. You can add cooked rice to the soup too if you like, or to your bowl before adding the hot soup.

With it being Easter, we opted for more vegetarian meals. Each day of Holy Week this week, we have been doing activities that coincides with our Bible passages. It’s Maundy Thursday, so we made unleavened bread to go with our lentil soup. It was actually quite delicious! We also had onion rice on the side too.
Lentil Cabbage Roll Soup
1 carrot, chopped
1 onion, diced
salt & pepper to taste
1/4 tsp dill
1/2 tsp Italian seasoning
1 tbsp oil or bacon grease
4 cups sliced cabbage
2 cups tomato sauce
3 to 5 cups water or broth
1/2 cup to 1 cup cooked lentils
2/3 cup peas
Sauté onion and carrot with seasonings in oil or grease until onion is tender. You can also add other veggies like parsnip, celery or mushrooms. Add cabbage. Stir. Sauté until tender. Add tomato sauce and stir. Add lentils. You can also add cooked ground beef instead of lentils or even meatballs. Bring to a boil. Cook 20 minutes. Taste. Adjust seasonings if necessary. Add peas. Cook 15 minutes. Serve as is or with rice.
