The one thing I love about the holidays is all the leftovers! It’s simple to toss leftover turkey and even cooked veggies into a soup or stew and create a fresh new meal to enjoy!
I often turn leftover turkey into a new meal because sometimes, there’s only so many turkey sandwiches one can eat!! I enjoy the flavor that roasted meats imparts in such dishes as soups and stews. And today, we are making turkey stew with dumplings — one of my favorite winter meals! Of course you can omit the dumplings, and you can add rice or pasta to the stew as well.
Let’s get started!
Toss chopped onion and carrot into the soup pot with butter, salt and pepper. I usually add celery as well, but I used up what I had on hand so I won’t be adding celery this time.
Once the onion is translucent, add cooked, chopped turkey. Sauté for a couple minutes.
Add potatoes. Add stock or broth. I kept the liquid from the roasting pan when I cooked the turkey, so that is what I’m using today. It has such a wonderful flavor!
It’ll take a few minutes for the stock to warm up and “melt” into the stew.
Once the stock is warmed, I can see how much there is. I usually make sure the stock or broth covers the veggies. Since I do not have enough, I’ll add water.
I add just enough water to cover the vegetables.
Bring to a boil and simmer about 20 minutes or until the potatoes are cooked. You could also add cooked potatoes and any other leftover vegetables you have on hand. Once potatoes are cooked, I add milk with a spoon of cornstarch mixed in to slightly thicken the stew. You could also use flour by adding a spoon or two into the cooked onions, before adding the stock. Add salt and pepper if needed and a sprinkle of dill.
Add peas. Bring to a boil. Prepare dumpling batter.
Time for dumplings!! Stir the stew before adding dumplings. Turn heat down slightly so the stew doesn’t burn.
Drop dumpling dough by spoonfuls into stew. Cover and cook for 15 minutes — no peeking!
After 15 minutes, the dumplings should be cooked and fluffy looking. If not, cook a few minutes longer.

Leftover Turkey Stew with Dumplings
1 onion, chopped
1 to 2 carrots, chopped
1 to 2 celery stalks, diced
Leftover cooked turkey, chopped, about 2 to 3 cups
Turkey stock from roasting turkey or chicken broth, about 3 to 4 cups
2 cups potatoes, chopped – you can use leftover potatoes as well
2 to 3 cups water
1 cup milk with 1-1/2 tbsp cornstarch mixed in
1/2 cup peas
You can add other cooked veggies like corn, mushrooms, and so on
Salt, pepper and dill to taste
Sauté onion, celery and carrot together. once onion is cooked, add leftover turkey. Sauté a couple minutes. Add stock, potatoes and water. I add enough water to cover veggies. Add seasonings. Cook 30 minutes. Once potatoes are cooked, add milk with cornstarch and peas. Stir. Cook 5 minutes while preparing dumpling dough. Drop dumplings by spoonfuls. Cover, cook 15 minutes. Remove lid and serve.
Dumplings
1 cup flour
1/2 tsp salt
2 tsp baking powder
1 tsp granulated sugar
1 tbsp butter
1/2 cup milk or enough to make a dough that can be dropped into the stew
Mix flour, salt, sugar and baking powder together. Crumble in butter. Add milk to form a loose dough. Drop by spoonfuls onto stew. Cover, cook 15 minutes — no peeking! Remove lid and serve.
