My mom has been making these delectable squares since I was a kid!! It’s a crunchy, nutty, butterscotch square with fluffy marshmallows. They’re delicious!
My mom got this recipe for Hopscotch Crunchies (that’s what they’re called in the cookbook!) from a Ukrainian cookbook called Baba’s Cookbook (pictured below), and I slightly adjusted the recipe (mainly the amounts) over the years.

This has been a family favorite for over 40 years, and one we enjoyed often, throughout the year!
Let’s get started!
Measure out the chow mein noodles and marshmallows. Set aside. The noodles are dried. These are the noodles (pictured below), that we have been using since I was a kid!!

Combine nut/seed butter of your choice with butterscotch chips. Peanut butter works great, but we are using Wow Butter since my girls are allergic to peanuts.

Place in microwave and melt for 1 minute. It may not look melted, but stir.

Stir well. If not melted, place in microwave at 20-second intervals so as to not burn. You can also melt it over a double boiler.

Add marshmallows and chow mein noodles. I add half, stir and then add the rest. You do not want the marshmallows to melt, so if it’s hot, let cool slightly before adding the noodles and marshmallows.

Mix well.

Press into a lightly buttered 9” pan.

Let sit a couple hours until set.

Once set, cut into squares and enjoy!

So yummy! And these squares freeze well too!

Hopscotch Crunchies
1-1/2 cups butterscotch chips
2 heaping tablespoons nut or seed butter of choice
3 cups dry chow mein noodles
2 cups mini marshmallows
Toss butterscotch chips and nut or seed butter into a bowl. Microwave for 1 minute. Stir well. Add marshmallows and noodles. Mix well. Pour into a lightly buttered 9” pan. Press. Let set, about 2 hours. Cut into squares and enjoy.
