Making homemade cranberry juice couldn’t be easier. The hardest part is waiting for the cooking time!! This homemade cranberry juice is absolutely delicious! It tastes like fresh cranberries — so different than store bought! And this is much better for you — it’s just cranberries, water and some sugar that you can adjust to your liking!
It’s rather tart with a hint of sweetness. When serving, I often pour half glass cranberry juice and half cup cold water. It’s so good!!
Let’s get started!
Dump cranberries into a large pot and fill with water. Add 1 cup sugar. Stir. Bring to a boil and simmer, covered, for one hour.
After one hour, stir. Uncover and cook for two hours.
After about an hour and a half, I decided to add a bit more water and another cup of sugar since it is extremely sour! Keep cooking!
After two hours, this is what the juice looks like. Let cool. I place the lid on and left it on the stove overnight.
Time to strain! First I scooped as many cranberries out as I can. I’ll use these to bake in a recipe or enjoy on top of pancakes.
Next, the strain through a cheesecloth or reusable produce bag. Today, I’m using a produce bag. I works lovely! Cranberries have lots of seeds, so that’s why I’m straining the juice. Keep straining until juice is jarred.
If you’d like to can it so it’s shelf stable, heat the juice to boiling after it’s been strained. Place in a water bath canning pot for 20 minutes.
If you place in jars while the juice is cold like I did, place in the fridge for up to 1 month. It never lasts that long in our house!
This homemade cranberry juice has such a pretty color to it. And it’s divine!
Homemade Cranberry Juice
Dump cranberries (600g bag) into a large pot and fill with water. Add 1 cup sugar. Stir. Bring to a boil and simmer, covered, for one hour. Uncover, and cook for 2 hours longer. Add more sugar if you like. Strain. Pour into a jar and refrigerate. If straining while hot, pour into prepared canning jars and process in a water bath canning pot for 20 minutes, adjusting for your altitude.
