We miss the days of going to the coffee shop, sitting at our usual table, enjoying our favorite sweet treat along with our coffee or a refreshing iced tea. So we decided to bring the coffee shop to us! This is our take on the beloved coffee shop oat fudge bar! It is scrumptious with a decadent fudge layer and a chewy oatmeal-coconut base. It is delicious with an afternoon cup of coffee or even for dessert.

Let’s get started!
I combined condensed milk and chocolate chips in a saucepan and heated until it was creamy smooth and chocolate was melted. Set aside. I used semisweet chocolate and dark chocolate for a richer flavor, but any chocolate chips will work great.
For the base, I melted the butter and sugar together in a large saucepan. Once butter melted, I then removed it from the heat and added eggs and vanilla. Stir until well combined.
Add coconut and oats. Stir well. Add flour.

Stir well. Mixture will be thick.

Spread half of the base into greased pan. My pan was 10×12 but 15×10 would work much better.

Dollop fudge and base over top.
Swirl. Bake until golden and centre is set. You can also use a spatula to smooth the top or drop in much smaller dollops and leave as is.

Remove from oven and let cool for an hour before cutting.

These bars have become a family favorite. The rich chocolate and the coconutty-oat layer in every bite is simply decadent. It is a chocolate lover’s dream bar!

Fudgy Oat Butterscotch Bars
Fudge
2 cups chocolate chips – we used 1 cup semisweet and 1 cup dark
2 tbsp butter
1 – 14oz can condensed milk
Melt altogether in a saucepan on the stove or in a microwave safe bowl.
Base
3/4 cup butter
2 cups brown sugar
2 eggs
1 tsp vanilla
2 cups flour
1/2 cup toasted coconut
1/2 cup oats
1/2 tsp salt
Melt butter in a large bowl. Add sugar, eggs and vanilla. Mix well. Add flour, coconut, oats and salt. Stir well. Spread half onto a greased 15×10″ pan. I used a small jelly roll pan, 10×12″. Dollop fudge on the top. Dollop the base on and swirl together. Bake at 350F for 25 to 35 minutes or until lightly golden and centre is set. Cool 1 hour. Cut into bars.
