We love soups in our house. Nothing beats a warm bowl of soup on a chilly fall day.
I like this easy homemade egg drop soup because it takes just a handful of ingredients and it isn’t heavy so it’s a great way to start a meal. We make this soup when we have too many eggs or are craving a yummy soup when we are short on time!
Let’s get started!
Saute onion, carrot and celery in a splash of oil or butter.
Once tender, add broth and bring to a boil.
Whisk egg with salt and pepper. Drizzle in egg and stir slowly. I stir slow so the egg pieces in the soup are large.
Cook just a few minutes.
Add in rice noodles. Cook about 5 minutes or until rice noodles are cooked.
It might not look the most appetizing but it smells and tastes amazing!
This is such a yummy soup! And a great way to start any meal because it’s not a heavy soup!
Serve with chives or green onion.
Easy Homemade Egg Drop Soup
1 carrot, diced
1 onion, diced
1 celery stalk, diced
4 cups chicken broth
4 eggs, beaten well and seasoned with salt and pepper
1 bunch of rice noodles
Sprinkle green onion or chives when serving
