This recipe is an oldie but a goodie from my mother-in-law’s collection. She often made this easy barbeque chicken recipe with a fresh chicken that she cut up into pieces and then placed in a roasting pan. She cooked it for a bit before placing this delicious sauce over top. She cooked it for a while… until the sauce became thick and the chicken was tender.
We enjoy making this recipe with chicken breasts as they are quick and easy and we often have chicken breasts on hand!
Let’s get started! We need a handful of ingredients for the sauce which is cooked on the stove. Then pour over top the chicken and let it cook until it’s ready — super simple! This sauce is also great on grilled meats as well.
Let’s get cooking!
To start, we need vinegar, ketchup, chili sauce, lemon juice, soy sauce, salt, pepper, water, brown sugar, onion and some green pepper.
Cook onion, green pepper in soy sauce, lemon juice, vinegar, water, salt, pepper and sugar for 20 minutes.
Add ketchup and chili sauce. Cook for 15 minutes. Pour over top chicken. Bake in oven at 350F for 1 hour or until chicken is cooked through.
Easy Barbecue Chicken
For 6 servings, you will need:
6 lbs chicken – cut up into pieces, or breast meat
place chicken in a casserole or roasting pan.
Sauce:
1/2 cup vinegar
1/4 cup brown sugar
1/2 tsp salt
1/4 cup diced green pepper
1/2 tsp pepper
dash tabasco- optional
1 cup onion, chopped
1-1/2 tbsp lemon juice
1 tbsp soy sauce
1/4 cup water
In a saucepan, combine sauce ingredients and cook for 20 minutes.
Add:
1 cup ketchup
1/4 cup chili sauce
Bring to a boil. Remove from heat and spoon over chicken. Bake at 350F for 45 to 60 minutes or until chicken is cooked, stirring occasionally.
This chicken is great on salad, in rice paper roll ups or as is. Its absolutely delicious and will be a family favourite.
