Nothing beats banana bread fresh from mom’s kitchen! My family loves banana bread and this is one of my favorites to make! It’s fluffy and moist and has such great flavor. And you can easily change it up by adding chocolate chips or nuts, or even berries. It makes the best french toast — which I share down below!
Let’s get to it!
I love that it uses just one bowl! First, I always mix the wet ingredients. Combine mashed bananas with oil, eggs, sugar, vanilla and plain yogurt. Stir well.
Add in flour, baking soda and salt. Stir well.
Pour into prepared loaf pan. I greased my loaf pan and lined with parchment so it would be easy to remove!
Bake at 350F for about 45 to 60 minutes or until toothpick inserted in centre comes out clean and the banana bread springs back when lightly touched. Let cool about 5 minutes before removing from pan.
Remove parchment and place on cooling rack to cool completely before slicing. Smells delicious! The whole kitchen is so fragrant — I love the smell of fresh banana bread baking!

French Toast:
As part of our Disney Days, we decided to make Banana Bread French Toast. This is a great way to use up banana bread that has been sitting a couple days. I made the banana bread french toast with the banana bread I made the day before and it worked perfectly! The banana bread french toast was moist, with a crispy edge — it was absolutely delicious! And we topped it with a bit of maple syrup and freshly whipped cream.
Be sure the banana bread is cut somewhat thick. In a bowl, combine 3 eggs, 1/4 cup milk or cream, splash vanilla and 1 tbsp sugar. Whisk well. Dip banana bread on each side in egg mixture and place in hot, lightly greased skillet. Cook until browned before flipping. Brown on other side before removing to serving platter. Continue until egg mixture is gone. Refrigerate leftovers.
This banana bread is great fresh with homemade butter and tastes great the next day! It also makes a yummy pb&j sandwich or hazelnut spread and strawberry sandwich! It really is a delicious breakfast or makes the perfect snack!
Easy Banana Bread
4 small bananas
2 eggs
1/4 cup oil
1 tsp vanilla
1/2 cup plain yogurt
3/4 cup sugar
1-1/2 cups flour
1 tsp baking soda
1/2 tsp salt
Combine mashed bananas, eggs, oil, vanilla, yogurt and sugar. Mix well. Add flour, baking soda and salt and stir well. Do not over mix, but do not leave clumps of flour. I always mix well and the banana bread always turns out fluffy and moist.
Pour into prepared loaf pan. Pour banana bread mixture into loaf pan. Let sit 10 minutes. Bake at 350F for 45 to 60 minutes or until toothpick or cake tester inserted in centre comes out clean. Let cool 5 minutes before removing from pan. Let cool on cooling rack completely before slicing.
Store in an airtight container to keep fresh, up to 3 days, or store in fridge for up to 1 week. Also freezes well for up to 3 months.
