We used to be a vegan family and learned to cook vegetables in a variety of ways. There are so many ways to get flavor into veggies, like grilling, roasting and even sauteing as well as using an array of spices and seasonings. I like roasting vegetables because it gives such a deep, rich flavor to them and most vegetables easily take on any spice or seasoning, much like these delicious cabbage “steaks.” We simply call these cabbage slices “steaks” because the cabbage is sliced into thick rounds and we often season them with BBQ spices and seasonings and even brush a BBQ sauce over them.
These cabbage steaks are great as the main focus of a meal accompanied with other roasted vegetables like carrots, parsnips and cauliflower along with sauteed beans or as a side dish to any meal! Oven roasted cabbage is quite versatile and can be topped with cooked ground meat, sour cream or yogurt, cheese and shredded lettuce, green onion and chopped tomatoes for a taco-style cabbage steak or ground beef mixed with cooked rice and topped on the cabbage steaks with pasta sauce for a cabbage roll-style cabbage steak. The options are endless.

Rinse cabbage and slice in thick “steak” slices. Drizzle baking pan with a little oil and place cabbage slices on. Drizzle cabbage with a little oil and season with your favorite seasonings. I used everything bagel seasoning as well as a smoky BBQ seasoning. Sprinkle with salt and pepper.
We liberally sprinkle seasoning on so the flavor comes through when baked.
Cook for 30 minutes. Flip carefully and season other side.
Cook another 30 minutes. Cabbage should be golden brown.
Cabbage Steaks
1 cabbage, sliced into thick “steak” slices
oil for drizzling
your favorite seasonings like smoky bbq or everything bagel or 3 Onion (using chives, onion powder and dried onion)
sprinkle of salt and pepper
Peel outer cabbage leaves off and rinse cabbage. Do not core, otherwise the cabbage “steaks” will fall apart. Slice into thick “steak” slices. Drizzle oil on baking pan or stoneware, place cabbage steak slices on and drizzle with oil. Season with a sprinkle of salt and pepper and your favorite seasonings. Bake at 350F for 30 minutes, flip and season other side and bake another 30 minutes or until golden brown. You can also grill the cabbage “steak” slices if you like. You can brush with bbq sauce for extra flavor as well. This makes a great side dish.
