Today we are making a delicious and hearty British-style casserole — cottage pie.
I grew up eating what we called shepherds pie that was made with leftover roast beef. Traditionally shepherds pie is made with ground lamb whereas cottage pie is made with ground beef. To the meat some veggies are added, broth and tomato sauce and then topped with mashed potatoes. It’s such a yummy meal and a great way to use up leftover vegetables and mashed potatoes. Serve with salad and fresh bread to stretch this cozy meal and feee a hungry family!
Let’s get started!
Brown ground beef. Add garlic salt or garlic powder, salt and pepper. Once nearly cooked, add onion, celery and carrot. Cook until meat is cooked and vegetables are tender. Add tomato sauce and beef broth.
Pour into a baking dish. I’m using my small roasting pan — it’s my favorite to use in the oven for casseroles and meats.
Boil potatoes. Drain and mash. Add a splash of milk and 1 tbsp butter. Stir. Add a sprinkle of salt and pepper.
Scoop the potatoes on top of the beef mixture and smooth slightly.
Sprinkle with cheese if you like.
Bake at 350F until golden, about 20 minutes.
It’s so delicious!! We serve it with vegetables on the side like salad or boiled carrots and peas or green beans. Tonight, we’re having cottage pie with salad.
Cottage Pie
1 lb ground beef
1/2 tsp garlic salt or powder
fresh cracked pepper
1/2 tsp salt
1 onion, diced
1 celery, diced
1 carrot, diced
2 heaping tbsp tomato sauce
1/2 cup beef broth
3 to 5 potatoes, peeled and chopped
2 tbsp butter
1/4 cup milk
1/2 cup shredded cheese
Brown ground beef. Once beef is nearly cooked, add onion, celery, carrot, garlic salt or powder, salt and pepper. once veggies are cooked, add tomato sauce and broth. Stir well.
Boil potatoes until tender. Drain and toss back into pot. Add butter and milk. Mash.
Toss meat into a casserole or baking dish. Spread potatoes over top. Sprinkle with cheese. Bake at 359F until golden, about 20 minutes. Serve with veggies or salad.
