We decided to do Disney Days again. For our homemade Disney Days, we play our Xbox Kinnect Disneyland game, hide hidden Mickey’s around our home and make food from around the park. We search Disneyland restaurant menus online and then make our own versions of food found in the park! Today, we made these scrumptious corn dog muffin bites and they were absolutely delicious!

Here our character is standing in front of the corn dog wagon, so what better to have for lunch than corn dogs! But, instead of making a traditional corn dog, I decided to turn it into a muffin which is super easy to eat, easy to cook and there’s no deep frying involved! Don’t they look delicious!?! Yum! Let’s get to it!
These are super easy to make! What I love is that I can mix them quickly and pop them in the oven so I can get back to our family fun! First, put dry ingredients in the bowl – that’s the cornmeal, flour, sugar, salt and baking powder. I then add the remaining ingredients to the flour mixture – the egg, honey, buttermilk (I used lemon juice, cream and water instead of buttermilk) and oil. Stir well.
I greased my muffin tins well, then I put a spoonful of batter, half a hot dog and then another spoonful of batter over top to cover the hot dog.
I made two half batches, so I decided to put corn in one batch. You could also add jalapeño, bell peppers, shredded cheese, taco seasoning or anything else to jazz it up! My kids like them more plain, so I left them plain.
Bake at 350F for about 20 minutes or until golden brown and cooked through (spring back when lightly touched or toothpick inserted in centre comes out clean).
Mmmmm….they smell delicious – just like a corn dog from the fair!
These are the corn bites with corn. I used frozen corn but you could use canned mexi-corn, fresh corn from the cob, or any type of corn you like.
We like to eat these yummy bites with ketchup and mustard. There’s so many mustards to choose from that are so tasty, like the honey chipotle we used. Yum!
Corn Dog Muffin Bites
Half Batch – makes 6 muffins
1/4 cup cornmeal
1/2 cup flour
1/2 tbsp sugar
pinch salt
3/4 tsp baking powder
1 egg
1 tbsp honey
2/3 cup buttermilk – I used lemon and cream and water
2 tsp oil
3 wieners/hot dogs
option – 1/3 cup corn
Combine cornmeal, flour, sugar, salt and baking powder together in bowl. Add egg, honey, buttermilk and oil to flour mixture. Stir well. Add corn or different mix-ins like jalapeno, shredded cheese and so on. Scoop into 6 muffin cups, top with 1/2 a hot dog and top with remaining batter. Bake at 350F for 20 minutes or until golden brown and toothpick inserted in centre comes out clean.
I then had an idea, so I remade these yummy muffin bites and I decided to chop up the hot dogs and put them in the batter, which turned out so much better and was much more flavorful!
You can use any type of hot dogs you like. I made several batches until I found the right combination of flour to cornmeal and different ways to incorporate the hot dogs. These are now a family favorite!
We enjoyed this version so much better than our original recipe! Super yummy! These will be something we will enjoy often! And this summer I just may bake them on the bbq in mini cast iron pans…stay tuned!
