I have made several variations of this fudgy oat square! They are delicious, but this bar is a little different with the addition of peanut butter. These chocolate peanut butter oat bars are simply delectable! They almost taste like a caramel peanut butter cup with oats. We made these without peanut butter and instead used a nut-free substitute which is super yummy! We gobbled them all up! These bars have a bit of a chocolate caramel, nutty taste — it’s nearly impossible to just eat one!
Let’s get started!
Combine butter and brown sugar in a pot.
Stir often until butter melts.
Bring to a boil and boil for 1 minute.
Add oats and Stir well. Cook for 3 to 4 minutes.
Stir well.
Place half in the bottom of a 8″ square baking pan or a torte pan. Press gently.
Melt chocolate chips and peanut butter, wow butter or nut or seed butter of choice together. Microwave for 30 second intervals until melted. Pour over oat layer, reserving a few spoons to drizzle the top with.
Spoon the remaining oats over the chocolate layer.
Drizzle with leftover chocolate.
We also decided to drizzle white chocolate over top to add some color to these bars, but that is totally optional! You could drizzle different colors of chocolate for different holidays and you could toss on festive sprinkles too!
Place in fridge to set, or leave on the counter for several hours. Once set, you can slice into these delectable bars! Yum!
It is hard to wait before slicing into these oat bars. They also freeze well for up to 3 months.
Chocolate Peanut Butter Oat Bars
1 cup butter
1/2 cup brown sugar
1 tsp vanilla
3 cups quick oats
1/2 cup peanut butter, wow butter or any nut or seed butter
1 cup chocolate chips
Combine butter and brown sugar in a pot. Cook on low until sugar dissolves. Bring to a boil and boil for 1 minute. Add vanilla and oats. Cook 3 to 4 minutes. Dump half the mixture into a lightly greased pan. I am using a torte pan today but I have also used a 8″ square pan too. Set aside.
In a small bowl, combine peanut butter and chocolate chips. Melt in the microwave in 30 second increments. Stir well. Pour over oats. Save a spoonful to drizzle over top. Pour remaining oat mixture over chocolate and spread. Drizzle with remaining melted chocolate. We also drizzled with white chocolate, but that is totally optional. Let set before slicing.
