It’s Halloween, so why not make some tasty nut-free treats!?!
My daughter is allergic to a variety of nuts, so we have been using Wow Butter (a nut free butter) since she was a toddler. I like Wow Butter the best because it’s versatile, you can bake with it and we found it tastes the closest to peanut butter. Since my girls cannot have peanut butter cups, we decided to make these yummy no-nut butter cups as a treat! And they are oh so delectable!
Let’s get started!
In a bowl, combine any nut or seed butter you like (we are using crunchy wow butter) along with butter and vanilla. Beat until well combined and fluffy.
Add icing sugar (powdered or confectioners sugar) and stir well.
Scoop with cookie scoop and flatten into discs. Place in freezer for 10 minutes.
Combine semi sweet and milk chocolate chips and melt. I placed in a bowl in the microwave and started at 1 minute and then microwaved in 30-second intervals until melted. Put a spoon of chocolate into a muffin liner. We are using silicone liners – heart shaped since that’s all I have!! You can also use paper liners.
You’ll want to go about half way up the liner with chocolate. Place in the fridge or freezer until set. Since we are using heart-shaped liners, it worked better if the chocolate was set, then it was easier to mold the wow-butter discs into the liner.
Once you place the nut/seed butter mixture into the chocolate-lined cups, spread with a light coating of chocolate. Place in fridge or freezer until set.
Remove from liners. So yummy!
Look at that deliciousness! Tastes just like a peanut butter cup!
You can also dip the molded no-nut butter discs into chocolate. I think it tasted better from the liners because it was a better no-nut butter to chocolate ratio. It also helps to flatten the no-nut butter discs more than I did before dipping into chocolate!! They’re actually really good either way!!
Homemade No-Nut Butter Cups
1 cup wow butter
1/4 cup butter
2 tsp vanilla
1-1/2 cups icing sugar
1 cup semi sweet chocolate chips
1 cup milk chocolate chips
Melt butter and wow butter together. Add icing sugar and vanilla. Mix well. Using a teaspoon, scoop some mixture, roll into a ball and flatten. Freeze for 10 minutes. Melt chocolate. Put 2 tbsp chocolate into a muffin liner. Push in the wow butter disc. Top with more chocolate. Refrigerate 10 minutes. Enjoy.
You can also add some protein powder – 1 cup icing sugar and 1/2 cup protein powder.
