I went through the freezer to see what needed to be used up. I had some chicken and some pizza salami, pepperoni and a piece of smokie so I decided to turn all that into a pizza flavored chicken noodle soup.
A warm, hearty chicken noodle soup filled an assortment of pizza toppings was delicious! I don’t know that I’d think automatically of pizza when I ate this soup, it’s more of a lasagna flavor, but perhaps if I’d have used pizza sauce or pasta sauce instead of crushed tomatoes, the soup may have had more of that authentic pizza taste!
It’s a yummy soup nonetheless and is great on any chilly day!
Let’s get started!
Of course I did not take photos of the first part, but I sautéed 3 raw chicken pieces with onion, carrot, salt and pepper, Italian seasoning, pizza seasoning and 3 onion seasoning. I also added half of a smokie that I had in the freezer. I chopped it up and cooked it with the chicken and veggies.
Once the chicken is cooked, remove it. It’ll be chopped and added back later.
Add crushed tomatoes or pizza or pasta sauce, water, garlic and pasta noodles of your choice. Boil and simmer 5 minutes.
Chop bell pepper. I’m using mini bell peppers and I chopped 3. I’m also using some salami and pepperoni. I chopped that as well. I’m adding a homegrown jalapeno pepper that I diced.
Once the pasta is half cooked, add the peppers, salami, pepperoni and chicken to the soup. Add a bit of water if needed. I added 1 cup of water.
Add more seasonings if needed. The soup smells amazing! Stir well.
Let cook about 8 to 10 minutes — just until the peppers have softened.
Serve with shredded cheese.
I put the lid on and turned the heat off while the Cast Iron Bannock finished baking. The pasta soaked up some of the juice, in turn plumping up the pasta, so the soup was more of a stew than a soup. But still super yummy!
Chicken Noodle Pizza Soup
1 onion, chopped
2 carrots, chopped
3 chicken breast tender pieces or 1-2 chicken breasts
1/2 to 1 sausage or smokie, chopped
1/2 tsp Italian seasoning
1 tsp pizza seasoning
1/2 tsp 3 onion seasoning
1 – 398ml crushed tomatoes
2 cups water or chicken broth, or enough to cover the pasta
1 garlic clove, minced
1 cup pasta of choice
1 bell pepper, chopped — I used 3 mini bell peppers
1 jalapeno, diced
A few pieces of pizza salami and pepperoni, chopped
Saute onion, carrot, sausage/smokie and chicken in seasonings and a bit of water. Once chicken is cooked, remove from pot and add in crushed tomatoes, garlic, water and pasta. Once pasta is half cooked, add chicken back along with peppers, salami & pepperoni and additional water and seasonings if needed. Cook for 8 to 10 minutes. Serve with shredded cheese.
