Butterscotch Confetti squares have been a delicious dessert item that I have grown up with. When I was a kid, it was something that was made for special occasions like holidays, wedding or baby showers and get togethers. Now, we enjoy them nut free, whenever we want! And they are super easy to make.
We use Wow Butter since my family can’t have nuts. But you can use what your family loves!
Combine butter, nut or seed butter and butterscotch chips. I didn’t have enough so I added 1-1/2 cups butterscotch chips and 1/2 cup white chocolate chips. You can also add chocolate chips instead of white chocolate which is equally delicious!
Microwave for 1 minute. Remove from microwave and stir. Microwave for 30 second intervals until melted. Stir well.
Stir well. Mixture should be smooth and creamy.
Add marshmallows. I mixed both colored marshmallows and white marshmallows together.
Stir well. If needed, add more marshmallows, but not too many otherwise squares will be crumbly and fall apart when cut.
Pour into a 8” or 9” baking pan. Press in pan firmly.
Let set before cutting – this may take several hours or overnight.
Once set, cut into squares. These freeze well between layers of parchment in an airtight container. Store leftovers in an airtight container so the butterscotch confetti does not dry out.
Butterscotch Confetti
1-1/2 cups butterscotch chips
2 tbsp butter
1/4 cup peanut butter, or nut or seed butter of choice
400g colored marshmallows
Microwave butterscotch chips, butter, and nut or seed butter of choice for 1 minute. Stir and microwave at 30 second intervals until melted. Stir. Add marshmallows. Stir well. Pour into an 8” or 9” greased baking pan. Press firmly. Let sit until set, several hours or overnight. Cut into squares. Store extras in airtight container. These delicious squares freeze well.
