My family loves banana everything, and we enjoy bran muffins, so of course I had to combine the two for a yummy, fluffy, moist and tender muffin that can be enjoyed for breakfast or as a snack!
Bran muffins date back to 1857 and banana bread to the 1930’s. But when these two delectable goodies merged into a delicious muffin, I am not completely sure. And I had difficulty finding any info on that in my food history research. But no matter when these melded, this wholesome muffin will be your new go-to banana muffin!
Let’s get started!
In a large bowl, pour in bran flakes, oil, sugar, eggs, sour milk, bananas and molasses.
Stir well. Let sit about 10 minutes for bran flakes to absorb some moisture which will help keep the muffins moist and tender and not dry and crumbly.
Add flour, salt, baking powder and baking soda.
Stir until incorporated.
Spoon into prepared muffin tin, about 3/4 full.
Let sit about 10 minutes while oven preheats.
Bake at 350F for 20 to 25 minutes or until top springs back when lightly touched and muffins are a light golden around edges.
With a little bit of the batter, I added a handful of raisins and baked it as I did the first batch. I got 15 muffins, but if you fill them about 2/3 full you will get about 18 muffins.
Banana Bran Muffins
1 cup bran flakes cereal
1/4 cup oil
1/2 cup sugar
2 eggs
1/2 cup sour milk — 2 tbsp lemon juice mixed with 1/2 cup milk and let stand a few minutes until curdled
3 bananas, mashed
2 tbsp molasses
1-1/4 cup flour
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1/2 cup raisins, optional
