We are taking a step into today and enjoying at-home Disney Days! My girls pick menu items from the Disneyland or California Adventure menus found on the Disneyland website and we make our own at-home versions based on the description. Then we eat these yummy meals, snacks and desserts, find hidden Mickey’s that my girls hide around the house and play our Disneyland game on Xbox 360 Kinect and simply have fun! Sometimes we also play Disneyland altogether on Minecraft which is also fun.
Let’s get started!

We enjoy playing this game — it’s one of our favorites! We have been doing Disney Days for a few years and that’s when we play the game! Here’s our progress so far:

Day One
Day One we decided to play in Tomorrowland and up our progress! We found some hidden Mickey’s, passed one part of Space Mountain and zapped some of the lights and found stuff with the wand.

Today’s hidden Mickey’s were fun to find! I enjoy this little tradition when we do Disney Days!

Today we had Breakfast Sliders from Smokejumpers Grill at Grizzly Peak which is simply bacon, egg and cheese on a bun served with an orange or breakfast seasoned fries. For our version, I made homemade buns and roasted the potatoes in the oven with green onion and red pepper and seasoned with just salt and pepper. I cooked bacon and fried some eggs. It was so good!

For lunch we had Deep Dish Cheese Pizza with extra cheese. You can get pizza from Pizza Planet in Tomorrowland but my daughter picked it from the Disney movie Inside Out 2. Of course I made the pizza crust (because it’s one of our favorites) and I had leftover sauce from the pizza meatloaves from the other night, so I used that for the pizza sauce. Topped with mozzarella cheese and triple cheese blend and baked to perfection! I served the pizza with carrots and ranch. This lunch was excellent!

Snack was a Mango Madness smoothie from Schmoozies. It’s mango, peach, banana and low-fat yogurt blended with pineapple, guava and passion fruit juice. For our version, in the blender we added: frozen peaches, banana, pineapple and mango along with mango yogurt, and Tropicana paradise blend juice and Oasis tropical passion juice. So delicious!!

Our drink we are enjoying throughout is a Picnic Time Watermelon Lemonade from Cafe Daisy which is a Minute Maid zero sugar lemonade with watermelon premium syrup and watermelon gummies. Our version has frozen lemonade made as per package directions mixed with watermelon juice (about 1 part lemonade and 2 parts watermelon juice) and we tossed a few watermelon gummy candies in our drink too! It was actually very good.

Supper was Beef Po’Boy Sandwich from Tiana’s Place in New Orleans Square. It’s slow cooked beef in a creole gravy, topped with shredded lettuce, tomato, pickle and mayo on toasted New Orleans style French bread served with red beans & rice and house pickles.
For our version, I cooked a tough steak in the crockpot with onion, the leftover tomato sauce that I didn’t use up on the pizza and water. I seasoned it with bbq seasoning, paprika, salt, onion powder, garlic powder, oregano, basil, thyme, black pepper and cayenne pepper. I will admit that I did not search what New Orleans style French bread was so I bought regular French bread. I toasted that — it’s much different but we thought we’d use it anyways. I used a homemade bun from breakfast since I was saving some French bread for breakfast tomorrow.
For the red beans & rice I tossed a can of kidney beans into the roasting pan along with salt and pepper, paprika, cayenne, garlic powder and onion powder. I added onion and celery, water with a bit of cornstarch. I cooked them in the oven for one hour, mixing them every so often. I had to add a bit more water. I opted to not puree them. I think they turned out great!

Dessert is from the Golden Horseshoe in Frontierland. It’s a warm triple chocolate chunk cookie, topped with vanilla ice cream, drizzled with chocolate and caramel sauce. I made a no-nut triple chocolate cookie served with store-bought vanilla ice cream, homemade caramel sauce and homemade chocolate sauce. Oh my gosh…it was so good!!

Day Two
Day Two we decided to keep playing in Tomorrowland to get more achievements. We got a few more secret Mickey’s which is awesome! We will see if we can completely finish a few more parts of this game today!

Our hidden Mickey’s were fun to find! I hid a couple and my girls each hid a bunch. It’s always a blast to find them! Here’s a few:

Today we again had breakfast from Smokejumpers Grill at Grizzly Peak which was French toast sticks served with powdered sugar, berries and maple syrup. I used the leftover buns that I made yesterday and used that for the French toast as well as the leftover French bread. I cracked 2 eggs in a large bowl, added a splash of milk, splash of vanilla, and 1 tsp sugar and whisked that. I dipped the bread in and cooked it in the skillet until golden on each side. I then cut the French toast into strips and the buns into triangles, dusted it with icing sugar, and served syrup and berries on the side. It was as yummy!

Lunch was chicken fenders from Flo’s V8 Cafe which is chicken strips served with an orange, carrots and milk or water. We opted for a chocolate almond milk. I did use store-bought chicken strips and nuggets (because my girls wanted both) to make it a little easier on myself! We didn’t have the orange but did have carrots with homemade ranch.
Snack is fried pickles from Carnation Cafe which is fried pickles and house sauce. We decided to make a dill dip with mayo, yogurt, dill pickle juice, dill pickle and dried dill and yes, I took the easy route and purchased the fried pickles! We combined snack and lunch together! It was really good because we haven’t had a meal like this in a few months!

Supper is chicken sesame-ginger vegetable noodles from Alien Pizza Planet in Tomorrowland. It’s grilled chicken, stir-fried vegetables served over noodles, tossed with sesame ginger sauce, cilantro and scallions.
For my version, I cooked the chicken in the oven with teriyaki sauce. I stir-fried garlic, fresh ginger, green onion, celery, and carrot until the carrot was tender. Then I added cabbage and cooked it until it was tender. Then I added broccoli and half the sauce. Once the broccoli turned a bright green, I added bell peppers and snow peas with a quarter more sauce. Once the veggies were done, I tossed them into a bowl. I cooked Japanese style ramen noodles then tossed that in the pan with garlic oil, fresh ginger and the remaining sauce. For the sauce, I combined 3/4 cup water, 1/4 cup soy sauce, 1 tbsp sesame oil, 5 tbsp sake, 2 tbsp sugar and 1 tbsp cornstarch. I divided the ramen noodles between us and my daughter added chopped chicken, stir-fried vegetables and a sprinkle of sesame seeds. It was delicious!

Dessert is a chocolate lover’s hot fudge sundae from Ghirardelli Soda Fountain & Chocolate Shop. It’s chocolate ice cream layered with hand made hot fudge, topped with whipped cream, dark chocolate chips, chocolate sauce and a milk chocolate square. Sounds decadent! For our version, we used store-bought chocolate ice cream, layered with homemade hot fudge sauce, whipped cream, a drizzle of chocolate sauce, chopped chocolate and a Ghirardelli caramel bunny. It is such a rich and decadent dessert! So good, but it’s not a dessert you can eat a lot of!

And that’s our Disney Days filled with fun and yummy food! We have leftovers for tomorrow which I’m looking forward to.

Day Three
We decided since we have lots of leftovers, to continue our Disney Days for one more day!
Breakfast today was basically the same as Day One, breakfast sliders. I toasted the buns, placed some shredded cheese on top with bacon, cooked fresh eggs with onion and red pepper sprinkled with cheese. I topped mine with tomato and lettuce. I divided the leftover hashbrowns and we had fruit too. It was great!

Snack was a Strawberry Banana Sensation smoothie from Schmoozies in California Adventure which is strawberries, banana and lowfat yogurt blended with strawberry-pineapple juice. Our version has frozen strawberries and bananas, vanilla yogurt, pineapple juice and strawberry-banana juice. It was refreshing and absolutely delicious!

Lunch was leftovers. I cooked fresh ramen noodles and we finished up the sesame-ginger veggie stir-fry. I sautéed some leftover rice with peas. I was going to put teriyaki sauce on the rice but decided to leave it plain so we ate some of the red beans and the beef from the beef Po’Boys with the rice which was delicious! I also had some bbq chick peas, halloumi & croutons (which was just toasted buns) which we ate with the red beans, beef and rice – it went so well with it! It was really delicious!! For the drink we made some more watermelon lemonade.

We played in Tomorrowland in the Disneyland game. We actually did pretty good in this section! Here’s our progress:

We ended our day this afternoon so supper will just be leftovers. We had a great time during our Disney Days! We ate lots of good food, and had fun!! I’m looking forward to our other fun days!!
