We enjoy apple fritters from the local donut shop. I enjoy the flavors of apple and cinnamon wrapped up in a dough and coated in a vanilla glaze. It’s just so tasty!! So I was ecstatic when a friend shared her recipe with us for this scrumptious apple fritter bread. And this recipe fits perfect in our harvest week!
I like quick breads because it’s just that – quick!! It’s a quick bread which means there’s no yeast and instead there’s baking soda. The wet ingredients are mixed first then the dry ingredients are added, stirred and tossed into a pan, much like a muffin. It’s simple to prepare and tastes great!!
Let’s get to it.
First, peel and core 3 apples and dice. Add to a bowl with brown sugar, cinnamon and ginger. Set aside.
In a large bowl, add egg, melted butter, granulated sugar and yogurt.
Stir well.
Add flour, salt and baking soda.
Stir until almost all combined. Add in 3/4 of the apples.
Stir gently until just all combined.
Add to a greased loaf pan. I am using stoneware.
Add remaining apple on top.
Bake at 350F for 45 to 55 minutes or until cake tester inserted in middle comes out clean. It may appear raw because of the apples.
I checked the loaf with a fork and it was gummy, so I cooked it a bit longer to be sure it was cooked in the centre! Nothing worse than slicing into a quick bread just to have it raw! And it looks like it’s burnt, but the loaf was still soft and not crunchy at all.
Let cool about 5 to 8 minutes before drizzling with glaze. When the loaf is too hot, the glaze will just soak in. The loaf here was warm and slightly soaked into the loaf.
Remove from pan and place in cooling rack. Drizzle with more glaze. When the glaze hardens, drizzle with a bit more glaze. Let cool completely.
The house smells divine!! This loaf is so moist I almost dropped it taking it out of the pan!
This apple fritter loaf is so soft and fluffy, tender and packed with apples. It has a lovely spiced flavor that is not overwhelming. It’s so good!
Apple Fritter Bread
3 apples, peeled and chopped
1/2 cup brown sugar
1/2 tsp cinnamon
1/4 tsp ginger
1 egg
1/3 cup granulated sugar
1/4 cup oil
1/4 cup yogurt
1 tsp vanilla
1 cup flour
1 tsp baking soda
1/2 tsp salt
Glaze
1 cup icing sugar
1 tsp vanilla
3 tbsp milk
Mix apples, brown sugar, cinnamon and ginger together. Set aside.
In a large bowl, whisk egg, granulated sugar, oil, yogurt, and vanilla until well combined.
Add flour, baking soda and salt. Mix until almost all flour is incorporated. Add 3/4 of the apple mixture and fold gently.
Pour into a greased loaf pan. Top with remaining apple. Bake at 350F for 45 to 55 minutes or until done. Top will spring back and a cake tester inserted in centre should come out clean.
Make glaze by mixing glaze ingredients together until smooth, and pour half over while still warm. Remove from pan once cooled and pour remaining glaze over.
