These lemon scones are a light, tender scone that is more like a biscuit but equally delicious!
My daughters attended an on online baking class as part of their homeschooling class over the weekend, and they learned how to make these scrumptious lemon scones. The neatest thing is the teacher who is also a pastry chef, is located in India! That’s the great thing about today’s technology — we can learn and talk to others from around the world!
Since the class was going, I didn’t take too many pictures but the full recipe is shared at the bottom of this post!

The wet ingredients are mixed and then set aside. The dry ingredients are mixed, butter is mixed in until crumbly and then the wet ingredients are added. Stir and cut the dough. Place on a baking sheet.
Bake at 375F for 20 minutes. Here are the scones baked. I was helping my daughter so we could complete it during the class so the instructor could see how the scones turned out!
Then once they cooled a bit we glazed the scones with a lemon glaze.
So yummy! These scones are tender, flaky and delicious!

Lemon Scones
1 egg
1/4 cup cream
2 tbsp milk
2 tbsp lemon juice
1 tbsp lemon zest
1 tsp vanilla
1 cup flour
2 tbsp sugar
1/4 tsp salt
1/4 cup butter
1/2 tbsp baking powder
Whisk the egg, cream, milk, lemon juice and zest, and vanilla together. Set aside.
Combine flour, sugar, salt and butter. Mix with fingers or pastry blender until crumbly. Add baking powder and stir well.
Add the egg mixture to the flour mixture. Stir well but do not over mix. If dough is too wet, add flour one tablespoon at a time until the dough is good. If too dry, add milk one tablespoon at a time until dough comes together.
Place dough into n floured surface or in between parchment. Roll until 1” thick. Cut out using a cookie cutter (we used the ring from a mason jar) or cut into triangles. Place scones on baking pan. Brush with milk. Bake at 375F for 15 minutes or until golden.
Icing:
1/4 cup icing sugar (powdered sugar or confectioners sugar)
1 tbsp lemon juice
Mix icing sugar and lemon juice together until you have a pourable glaze.
Once scones are baked, let cool slightly before glazing. Sprinkle with icing sugar or lemon zest.
