It’s banana week in our house! We bought a bunch of bananas on sale so we are making an assortment of muffins this week! These delicious banana oat muffins are moist, soft and fluffy! It’s hard not to eat them all at once! They’re best the same day and makes a great french toast muffin the next day!
We made mini muffins last week and today we are making banana oat muffins. I’ll have more banana muffin recipes to share with you this week!
Let’s get started!
To a large bowl, add 2 eggs, 3 mashed bananas, 1/2 cup sour milk (1 tsp lemon juice in 1/2 cup milk of your choice), 1/2 cup white sugar, 1 tsp vanilla and 1/4 cup oil or applesauce.
Add 1 cup oats and 1/2 cup hot water but not boiling water.
Stir well. Let stand 10 minutes for the oats to absorb some moisture.
Add 1 cup flour, 1/4 tsp salt, 1 tsp baking powder and 1 tsp baking soda.
Scoop into a greased muffin tin.
I usually fill them about 3/4 full so the muffin has a nice top to it. This batter yields about 17 muffins if filled 3/4 full.
Sprinkle top with brown sugar and oats. Let sit 8 minutes before baking. Bake at 350F for 20 to 25 minutes or until golden and top springs back when lightly touched or toothpick inserted in centre comes out clean.
Yum! They smell amazing. Leave in pan for 5 minutes before removing from pan and letting cool in cooling rack.

1/4 tsp salt
