When I was growing up, my mom always turned leftover roast beef into Shepherd’s Pie. She’d grind the leftover beef and then toss it in a skillet with butter and onion. Then it got tossed into a casserole dish, topped with leftover mashed potatoes and tossed in the oven until the potatoes were golden. It was always well enjoyed!
Now, I make a few variations of the Shepherd’s Pie that I grew up with! Sometimes I make it with leftover roast beef and sometimes with ground beef. Sometimes I use leftover vegetables and sometimes with fresh or frozen veggies. No matter which way it is made, it’s always delicious!
Let’s get to it!!
Today, I am adding veggies to the leftover roast beef that I chopped small. To start, I added onion, corn and the leftover roast beef from the fridge.
Once the onion is cooked, I added leftover carrot and peas and a few small chopped leftover potatoes. I make a gravy by adding beef broth and a bit of water and cornstarch. Sometimes I add leftover gravy. You can also add gravy powder mix and water. I like adding gravy so the mixture doesn’t become dry in the oven. I season with salt, pepper and dried dill.
Toss into a casserole dish or small roasting pan like I have.
Top with mashed potatoes and shredded cheese. This is such a great way to get rid of extra mashed potatoes.
Bake at 350F for 20 minutes or until golden brown.
Serve with fresh biscuits or bread.
Leftover Shepherds Pie
roast beef – leftover, chopped up
1 small onion, diced
1 cup corn
2/3 cup leftover peas
1/2 cup leftover carrot
1 cup leftover potatoes, chopped
2 cups gravy or beef broth with cornstarch slurry (1 tbsp cornstarch in 2 tbsp water) stirred into the broth
salt and pepper to taste
sprinkle of dill
leftover mashed potatoes
1 cup shredded cheese
Saute roast beef, onion and corn together. Once onion is cooked, add peas, carrot and potatoes. Cook until heated through. Add gravy or broth mixture and seasonings. Heat to boiling. Pour into casserole dish or small roasting pan. Top with leftover mashed potatoes and shredded cheese. Bake at 350F for about 30 minutes or until golden.
