These delicious potato pancakes are not pancakes at all — they are actually a fried potato patty, like a hashbrown or latke. They are simply delicious and I have made them with cauliflower or potatoes and I have added other shredded veggies like zucchini and carrots to them. They are easy to make and delicious for any meal of the day!
One time my girls and I attended a harvest festival at Fort Edmonton Park and they were using vegetables as they once did – they grated a bunch of different vegetables like beets, carrot and potatoes and added flour, salt and pepper and created a delicious veggie patty that we were able to taste. It was such a great idea, that I now make them quite often. These yummy veggie patties have been eaten since the 1800’s and were noted as peasant food because potatoes were cheap, plentiful and stored well making it a popular vegetable to cook with.
Let’s get started!
First, I grate potatoes that have been peeled and washed. I grate them by hand and place in a bowl of cold water because otherwise they will brown quickly. Let soak for at least 15 minutes.
Rinse and drain the grated potatoes. Squeeze the water out and place in a bowl. I just take handfuls of potato and squeeze the water out with my hands and then toss into the bowl.
I add an egg or two depending on how many potatoes I grated, along with fresh cracked herbed salt and pepper along with 3 onion seasoning, a handful of shredded cheese and flour.
Mix altogether. If mixture seems too wet, add more flour.
Scoop with a large spoon and pour into a hot skillet with a bit of oil. I press into my large serving spoon and then pour into the skillet and press it down slightly so all of my patties are the same size. You could use a cookie scoop as well. Cook on medium heat until browned, about 5 to 8 minutes.
Flip and brown on other side.
Remove to plate and cook until all potatoes have been cooked.
Do these not look scrumptious!?! Serve with breakfast like eggs and bacon or serve alongside a meal as a side dish. Serve with ketchup, sour cream or eat as is. No matter which way you have them, you’re sure to enjoy!

5-6 large potatoes, peeled and grated
2 eggs
sprinkle salt and pepper
sprinkle onion powder or 3 onion seasoning or fresh grated onion
1/2 cup shredded cheese
3 tbsp flour

Add egg fresh cracked herbed salt and pepper along with onion, shredded cheese and flour. Mix altogether. If mixture seems too wet, add more flour. Scoop with a large spoon or cookie scoop and pour into a hot skillet with a bit of oil. Cook on medium heat until browned, about 5 to 8 minutes. Flip and brown on other side. Remove to plate and continue until all potatoes have been cooked.
