Lasagne grilled cheese may sound weird, and not exactly from the old fashioned homestead, but it is simply delicious, especially when made with homemade bread!! This turkey-veggie lasagne grilled cheese is delicious and the turkey-veggie sauce tastes wonderful with pasta or made as a traditional lasagne. We love grilled cheese sandwiches and like changing them up, adding different cheeses and meats or even this turkey-veggie sauce to it. It is uniquely delicious and tastes just like lasagne in a sandwich!
Let’s get started!
Add onion to pan with a splash of oil, salt and pepper and a splash of water.
Add ground turkey, salt and pepper, dried parsley and Italian seasoning.
Cook until ground turkey is cooked through.
Add shredded carrot and shredded zucchini. Cook until vegetables are tender.
Add pasta sauce, and additional seasonings if needed.
Dollop ricotta cheese over top and sprinkle with dried parsley. You can also use fresh herbs like parsley and basil. This sauce is delicious on pasta or in a baked lasagne. It tastes great with rice, or even cornmeal (polenta) or slightly cool to add to the grilled cheese!
On bread, layer sandwich with cheese, ricotta cheese, Italian seasoning and dried parsley, a few spoons of turkey-veggie sauce, cheese and then top with the bread and place in a skillet or panini press. Brush each side of bread with garlic butter and cook until browned on each side.
This messy but yummy grilled cheese tastes like lasagne met cheesy garlic bread! It has become a new family favorite!
Turkey-Veggie Lasagne Grilled Cheese
1 onion, chopped
1 tbsp oil of choice
1 lb ground turkey
1 tsp salt
1/2 tsp fresh cracked pepper
1 tsp Italian seasoning
1 tsp dried parsley
1 cup shredded carrot
1-1/2 cups shredded zucchini
2-1/2 cups pasta sauce – can add more if needed
1/2 cup water
2/3 cup ricotta cheese
For Grilled Cheese: bread, garlic butter (1/4 cup butter mixed with 1/2 tsp garlic powder), ricotta cheese and favorite cheeses for the grilled cheese
Add onion, oil, ground turkey, and seasonings. Cook until ground turkey is cooked through and lightly browned. Add carrot and zucchini and cook until tender. Add pasta sauce, water and adjust seasonings as necessary. Cook 20 minutes. Add spoons of ricotta around sauce. This recipe makes much more sauce than what is needed for the grilled cheese sandwiches!
For the grilled cheese, on the bread, layer cheese, ricotta, turkey-veggie sauce, cheese and top with bread. Spread garlic butter over both sides of bread and place in heated skillet. Once browned, flip carefully and brown on other side. You can also place sandwich in a panini press or use a grill pan and press.
