The Reuben dates back to 1926 New York — although I have never tasted an authentic Reuben sandwich, I enjoy making my own variations which are delicious in their own right!
Not only do we love the flavors of a Reuben but we equally enjoy stuffed peppers. I like making a variety of stuffed peppers and I often cut them in half which makes it so much easier to stuff and to eat!
Let’s get started!
Saute sliced onions in butter and water until tender. Add a sprinkle of salt and pepper. Add a splash of oil to the pan. Slice pastrami or Montreal smoked meat into thin strips – we actually used both because I like the flavor each offers to this dish. Saute until lightly browned. Add sauerkraut. Cook 15 minutes.
While the meat cooks, prepare the bell peppers. Use any colors you like. We chose to use yellow because of their sweet, mellow flavor which does not over power this dish.
Slice peppers in half, remove seeds and rinse. Add a drizzle of oil to baking dish and add peppers to it. Add a sprinkle of cheese, roughly 1 to 2 tbsp.
Add meat mixture to peppers.
Divide all meat between all the peppers.
Looks so delicious!
Add sprinkle to cheese to the peppers.
Bake at 350F for 30 minutes.
These smell and taste amazing! We will dollop homemade 1000 island dressing on these yummy peppers.
We are going to serve the stuffed peppers with salad. I rough chopped lettuce and julienned (slice in thin strips) cucumber and carrot. I also had tomatoes in another bowl. I like prepping vegetables like this so everyone can build their own salad! You can also add any other vegetables you enjoy like snap peas, bell peppers, mushrooms and so on.
Next up, we are going to prepare the 1000 Island dressing which is super simple. We use yogurt with just a bit of mayo plus the seasonings and a squirt of ketchup and relish — it is so yummy and always tastes better the longer it sits! We drizzled the dressing on our salad as well as topping our stuffed peppers with it for more of the Reuben-style flavor we love!

Reuben Style Stuffed Peppers with Homemade 1000 Island Dressing
Homemade 1000 Island Dressing
1 cup yogurt
2 tbsp mayo
3 tbsp ketchup
3 tbsp relish or diced pickles
1/2 tsp onion powder
1 tsp dill
sprinkle garlic powder
sprinkle black pepper
Mix altogether. Taste for seasonings. Refrigerate.
Reuben Style Stuffed Peppers
3 bell peppers – or 1 pepper per person
1 onion, sliced
450g pastrami or Montreal smoked meat
2/3 cup sauerkraut – or as much as you would like
shredded cheese
Cut peppers in half, remove seeds and rinse. Drizzle oil in a baking dish. Place peppers in. Add a sprinkle of cheese.
Saute sliced onions in 1 tbsp butter and 1/2 cup water. Sprinkle with salt and pepper.
Slice meat into thin strips. Once onion is tender, add meat to pan with a drizzle of oil. Saute until lightly browned. Add sauerkraut, and cook 10 minutes.
Divide meat between pepper halves. Top with shredded cheese. Bake at 350F for 30 minutes. Serve with Homemade 1000 Island Dressing and salad.
