These apple fig bars are moist, full of apple and fig flavor with a hint of spice and bursting with oats. They are simply delicious. They are like a hearty granola bar.
Let’s get started!
Cream butter and sugar until light and fluffy.

Add eggs to butter mixture, one at a time and beat until thoroughly combined.

I combined the oatmeal, baking powder, salt, and spices together.
The figs we purchased were really dried out, so my daughter chopped them and I cooked them for a few minutes in the microwave with a bit of water. If your figs are soft, you don’t need to cook them, just chop.
I grated one apple.
I used 3/4 cup all purpose flour and 1/4 cup whole wheat flour.

I tossed the oatmeal into the butter mixture and then added the apple.

Add flour and figs.

Mix well.

Spread dough evenly in greased 9×13” baking pan.

Bake at 350F for 25 to 30 minutes or until browned and a toothpick pierced in the center comes out clean.

These are delicious drizzled with honey and cinnamon sugar!
