Soup is always an easy and affordable way to feed a hungry family. Soup is such a versatile meal and can have an array of ingredients, including an assortment of vegetables, different grains or pastas and can be made with meat or poultry or completely meatless, and seasonings and spices can completely change up that bowl of soup!
Today’s soup is a creamy chicken soup. It can easily be made thicker (more like a stew) by adding mashed potatoes, or flour or cornstarch. I added a splash of cream which made it a bit rich and absolutely scrumptious!
Let’s get started!
First off, I sauteed chicken breast with onions, in a splash of oil and water and garlic, salt and pepper. Once chicken was cooked, I removed it, chopped it up and added it back to the pot with celery, carrots, and corn.
I saute the vegetables and chicken until the onion is tender and add a splash of water if the pot goes dry.
Add chicken broth and water to cover the vegetables. Bring to a boil. Add potatoes, dill and a bit more salt. Reduce heat. Cook 20 minutes. Add pasta and cook 10 minutes longer or until pasta is cooked. Taste for seasonings.
Look at that hearty deliciousness! If you would like the soup thicker, now is the time to thicken it by using cooked, mashed potatoes, or a flour/cornstarch slurry. Add cream or milk and stir. Remove from heat. Let stand 5 to 10 minutes before serving.
Adding cream or milk makes the soup a little creamier and tastes so much more rich but can be omitted and it will still taste great! This is one of our favorite chicken noodle soup recipes!
Changing up this soup is so easy! You can also add coconut milk instead of cream or regular milk and a little curry or Thai spices for a spicy Asian flair. You can also add tomatoes, black beans and taco seasoning and serve with cheese and salsa with sour cream for a fiesta tex-mex flavor! You can add dill pickle juice and chopped up pickles, cooked bacon and a dollop of sour cream and shredded cheese for a loaded chicken baked potato soup! The options really are endless and are all equally delicious!
Creamy Chicken Soup
1 onion, diced
1 tbsp oil or butter
1 to 2 chicken breasts, or 3 to 5 chicken breast tenders
1 clove garlic, minced
1 tsp salt
1/4 tsp pepper
2 stalks celery, diced
3/4 cup carrot, diced
1 cup corn
1 tbsp fresh dill or 1/2 tsp dried dill
8 cups water or 4 cups chicken broth and 4 cups water
3 potatoes, chopped
1 cup pasta of choice
1/2 cup cream or milk of choice
Saute onion and chicken in oil or butter with salt and pepper and garlic. Once chicken is cooked, remove and chop up. Add back to pot along with celery, carrot, and corn. Saute for a few minutes, until onion is tender. Add dill, water and broth. Bring to a boil. Add potatoes. Cook 20 minutes, stirring occasionally. Taste and adjust seasonings as necessary. Add pasta and cook another 10 minutes. Add milk or cream and stir. Remove from heat and let stand 10 minutes. Serve with fresh bread, biscuits or toast.
