We bought a small bag of avocados, and have been eating them all week in bbq chicken rice bowls, chili and we decided to use the rest up on this delicious avocado pesto pasta. It’s like guacamole on pasta — it’s so good! And a dish I’ll make any time we have a bunch of avocados! And it’s an easy way to have dinner on the table fast — perfect for those busy nights!
Let’s get started!
While onion is cooking, cook pasta.
Cook onion and carrot until tender. Season with salt, pepper, guacamole seasoning and garlic.

Mash avocado. The avocados we had were so ripe, I just mashed them with the knife. I then seasoned with lime juice, feta cheese, Parmesan cheese, salt, pepper and guacamole seasoning. It looked like a guacamole board…

…so we had to have a taste and it was so delicious!!

Toss avocado into the pan. Stir until heated and slightly thickened.

Taste for seasonings.

Serve over cooked pasta. I cooked two different noodles since we didn’t have enough of either one. We just spooned the sauce on our pasta rather than mixing the pasta into the sauce. It was exceptionally tasty.

Avocado Pesto Pasta
1 small onion, diced
1 carrot, shredded
1 tbsp guacamole seasoning, divided
Salt and pepper to taste
2 to 3 cloves garlic, minced
4 to 5 avocados
1-2 tbsp lime juice
3 tbsp feta cheese
3 tbsp parmesan cheese
Cooked pasta of your choice
Cook onion and carrot until tender. Season with salt, pepper, 1/2 the guacamole seasoning and garlic. Mash avocado. Season with lime juice, feta cheese, Parmesan cheese, salt, pepper and remaining guacamole seasoning. Toss avocado into the pan. Stir until heated and slightly thickened. Serve over pasta.
