It’s Day 8 of the 12 Days of Cookies! These cookies have a few steps but are delicious! They taste just like Nanaimo Bars which is a dessert square or bar that has a chocolaty-coconut base with a custard-like filling and topped with chocolate. These cookies are similar to Nanaimo Bars with a chocolate coconut cookie, a vanilla pudding frosting and drizzled with chocolate — perfect for any holiday dessert tray!
Let’s get started!
Cream butter and brown sugar until smooth. I also added the vanilla now too.
Beat in egg.
Stir in cocoa powder.
Stir in coconut, graham crumbs, baking powder and salt.
Stir in flour gradually.
Scoop dough and roll into balls. Make indent in centre. Bake at 350F for 12 to 14 minutes.
Remove from oven, loosen and indent again. Transfer to cooling rack and let cool completely.
For the filling, beat butter, cream, vanilla, salt and pudding mix together. Add icing sugar slowly until a thick icing is made. Place in piping bag and pipe onto cooled cookies.
Place chocolate chips in a small bowl with butter. Melt in microwave for 30-second intervals until melted. Drizzle over cookies. Let set.
These cookies are simply delicious — tastes just like a Nanaimo Bar! Yum!
Nanaimo Bar Thumbprint Cookies
Cookie Dough:
1 cup flour
1/2 cup graham crumbs
1/4 cup cocoa powder
1 tsp baking powder
1/2 tsp salt
2/3 cup butter
3/4 cup brown sugar
1 egg
1 tsp vanilla
3/4 cup toasted coconut
Filling:
1/3 cup butter
1 tbsp heavy cream
1 tsp vanilla
1/4 tsp salt
3 tbsp instant vanilla pudding powder
1 cup icing sugar
Chocolate Drizzle:
1/4 cup chocolate chips
1/2 tbsp butter
