I always enjoy apple recipes! I happen to have a couple of apples that began to go soft, so I decided to make these yummy apple fritter bites! These taste similar to a delicious apple fritter donut.
These bites are moist and fluffy, packed with crunchy apples and cinnamon, and topped with a spiced sweet glaze — the perfect bite for afternoon tea or a treat after a meal.

First, we had a couple apples that needed to be baked with! So I decided to peel and chop the apples up, sprinkle with brown sugar and cinnamon, cover and place in the fridge overnight. The next day, I drained the apple juice into a separate bowl because we need it for the glaze. Next, time to make the dough!
In a bowl, combine melted butter, brown sugar, egg, vanilla, cinnamon and applesauce.
Whisk until smooth.
Add flour, baking powder, and salt. Add apples.
Stir well.
Scoop into lightly greased muffin pan or donut pan. We are using a donut hole pan.
Bake at 350F for 15 to 28 minutes or until toothpick inserted into the centre comes out clean and top springs back when lightly touched.
Bake at 350F for 15 to 18 minutes, or until a toothpick inserted into the centre comes out clean. These cooked for 23 minutes. While these cool, we need to make the glaze!
We are using the “juice” from the apples, to make the glaze. Into the juice, add icing sugar (powdered sugar) and stir. Add enough icing sugar for a pourable glaze. You can also use regular apple juice.
Dip each warm apple fritter bite into the glaze, allowing any excess to drip off.
Set on a cooling rack to let the glaze set. I didn’t want to clean the cooling rack, so I placed them on a cutting mat.
Once the glaze is set, enjoy! These little bites are so tasty! They pack a lot of flavor.
There’s apple in every bite! So good! These would make a great treat in school or work lunches, a snack on the go or after a meal. Delicious!
They make a lovely treat with a cup of tea! We’re enjoying it with Mugicha tea which is a Japanese barley tea. It has a nutty flavor that pairs well with the apple fritter bites!
Apple Fritter Bites
1-1/2 cups all-purpose flour
2 tsp baking powder
1/2 tsp salt
1-1/2 tsp cinnamon
1/4 cup melted butter
1/4 cup brown sugar
1 egg
1 tsp vanilla
1/2 cup applesauce
1-1/2 cups finely diced Honeycrisp or Gala apples (about 2 medium apples) — we used 2 large Cosmic apples
For the Apple Glaze:
2 cups powdered sugar
1/3 cup apple juice
Lightly grease a mini muffin tin or donut hole pan.
In a bowl, whisk the melted butter and brown sugar until well combined. Add the egg, vanilla, cinnamon and applesauce, mixing until smooth.
Add flour, baking powder, and salt. Add apples. Stir well.
Spoon the batter into the prepared pan, filling each cup about three-quarters full.
Bake at 350F for 15 to 18 minutes, or until a toothpick inserted into the centre comes out clean.
While the bites cool slightly, make the glaze by whisking together the powdered sugar and apple juice until smooth and slightly thickened.
Dip each warm apple fritter bite into the glaze, allowing any excess to drip off. Set on a cooling rack to let the glaze set.
