These fluffy pumpkin pancakes are a delicious way to start the day! And it’s a great way to use up pumpkin puree!
We like to top these delectable pancakes with Homemade Pumpkin Butter, Cream Cheese Syrup and pumpkin pie spiced whipped cream for breakfast that tastes like pumpkin pie! You could also sprinkle with chopped nuts and maple syrup if you like.
Let’s get started!
In a bowl, toss eggs, pumpkin puree, brown sugar, butter and pumpkin pie spice.
Add milk and vanilla. Stir well.
Add flour, salt, baking powder and soda along with the cinnamon.
Stir well.
Spoon batter into a greased, hot pan. Once bubbly, flip and cook until browned.
Once browned and cooked through, remove from pan. Repeat until batter is gone.
I made mini pancakes too because my girls love dollar sized pancakes!
And large pancakes too!
Top with cream cheese syrup, pumpkin butter and spiced whipped cream — tastes like dessert! These are delicious warmed in the air fryer or oven the next day!

1/4 cup brown sugar
1/4 cup melted butter
1/2 cup pumpkin puree
1 cup buttermilk
2 eggs
1 tsp vanilla
1-1/2 cups flour
1/4 tsp salt
1 tbsp baking powder
1 tsp baking soda
1/2 tsp cinnamon
Pumpkin Spice Whipped Cream: Whip together until whipped cream has light peaks: 1 cup cream, 1/2 cup icing sugar, 1 tsp vanilla and 1/4 tsp pumpkin pie spice
