Today we are roasting some pumpkin seeds. I am cooking up a pumpkin to puree so we can make an assortment of pumpkin goodies this week and I thought we’d roast the seeds.
Roasting pumpkin seeds produces a more flavorful and nutty taste. Cooking pumpkin seeds dates back as far as 7000BC and have been eaten throughout history for sustenance and medicinal purposes.
I have been eating toasted pumpkin seeds since I was a kid and they’re simply delicious!! Season with your favorite seasonings for a delicious snack or add to salads!

This is such a nice big pumpkin!! We are saving these seeds to roast and to keep to plant next year.
Here’s the seeds from the pumpkin we grew. I just scrape all I can and place it in a bowl. It does have some “pumpkin guts” in it but that’s ok, we’ll get rid of that after!
I then put water in the bowl and let it soak for a couple minutes.
Then, I add a bit more water and slowly pick the seeds out and place them in a colander.
Once there’s a bit more water in the bowl, the pumpkin guts will sink, making it easier to remove the seeds. Toss them into a colander.
I rinse the seeds several times until they’re nice and clean. I’ll rinse them one more time before roasting. We will also save some to plant for next year!
To save the pumpkin seeds, I place them on a paper towel to dry. Flip and let them dry on the other side. I leave them to dry for about a week before putting them in a jar.
The seeds we are roasting are dumped into a pan. I’m using a stoneware.
Drizzle with oil.
Stir.
Sprinkle with seasonings. I sprinkled the pumpkin seeds with honey sriracha, pizza seasoning, salt and pepper.
Stir well. Bake at 375F for about one hour or until golden, stirring every 15 minutes.
Some of these seeds got a bit more toasty than I wanted, but they still taste delicious.
Yum! And they’re so flavorful — salty, crispy, spicy!!So much better than a bag of chips!
Store in a jar or airtight container. I leave them in a bowl on the counter or in a jar so they’re easy to grab!
Toasted and Roasted Pumpkin Seeds
Pumpkin seeds – cleaned, rinsed and drained
Drizzle of oil
1 to 2 tsp of your favorite seasoning
Fresh cracked salt and pepper
Drizzle seeds with oil. Place on pan. Sprinkle with seasonings. Bake at 375F for about one hour or until golden brown, stirring every 15 minutes. Store in an airtight container.
