It’s Day 9 of the 12 Days of Cookies and today’s cookie is a tender, light and flaky cookie with a light chocolate flavor and melts in your mouth! It’s so scrumptiously delicious!
Let’s get started!
Cream butter until fluffy. You can use a hand mixer or stand mixer — we are just mixing by hand.
Add cornstarch, icing sugar and vanilla. Whip until fluffy.
Add cocoa powder and beat until well incorporated.
Add flour and whip until it comes together.
I found we needed more flour because the dough was too sticky to roll. Beat well.
Look at that beautiful dough — it’s so soft!
Scoop with cookie scoop and then roll into balls. We used a cookie scoop to keep the cookies all the same size. Place on cookie sheet. Lightly press fork onto cookie. These do not spread, so cookies can be placed a bit closer together.
Bake at 350F for 8 to 10 minutes or until edges are set.
Remove to cooling rack to cool completely.
You can dip into chocolate and decorate with sprinkles if you like. We decided to keep them plain.
Chocolate Whipped Shortbread Cookies
1 cup butter
1/4 cup cornstarch
1 cup flour
1/4 cup cocoa powder
1/2 cup icing sugar
1 tsp vanilla
Cream butter until fluffy. If using a hand mixer or stand mixer, add cornstarch, flour, cocoa powder, icing sugar and vanilla. Whip dough with mixer until it comes together. Roll into balls and place 2” apart on baking sheet. Dip fork in flour, shake off excess and press onto cookie. Bake at 350F for 8 to 10 minutes or until edges are set. Remove to cooling rack to cool completely.
Dip in white chocolate if you like and sprinkle with holiday sprinkles.
