It’s Day 6 of the 12 Days of Cookies! We are already half way through!! Today’s cookie is a yummy cookie bite that tastes a little like the crunchy chocolate bar but has that added nutty (or no nutty) flavor!
We made these nut-free by using a no-nut butter, but you can easily use any nut or seed butter you like.
Let’s get started!
Combine chocolate chips, nut or seed butter, and butter together in a bowl.
Microwave in 30-second intervals until melted. Stir until creamy and smooth. Dump in the rice cereal. Stir well.
Once well combined, scoop onto parchment or a silicone mat. I’m using a flexible cutting mat.
Drizzle with melted chocolate. I’m using white chocolate. You can also sprinkle with holiday sprinkles atop the melted chocolate. Let set.
Once set, place in an airtight container. These freeze well.
Chocolate Crunchy Bites
1-1/2 cups chocolate chips
1/2 cup wow butter
1 tbsp butter
2 cups crisp rice cereal
Melt the chocolate chips, wow butter, and butter together in a bowl in the microwave. Microwave in 30-second intervals. Stir until creamy and smooth. Dump in the rice cereal. Stir well.
Drop by spoonfuls onto a parchment lined baking sheet.
Melt 1/4 cup chocolate chips. Drizzle overtop. Let sit until set.
