It’s Day 12 — the last day of our 12 Days of Cookies. I can’t believe the 12 Days of Cookies is complete — and we have a freezer full of cookies for the holidays! We have had some pretty delicious cookies and these are no exception!! Lebkuchen is a soft and chewy German spiced gingerbread cookie with flavors of cinnamon, cloves, and nutmeg. They are traditionally topped with a sweet glaze or chocolate and one of my favorites! The usually buy these but homemade are simply delicious — and taste like I remember!
Let’s get started!
Combine honey and brown sugar.
Microwave until sugar has dissolved. Let cool slightly, then add the egg. Beat well. You can also do this in a saucepan (directions below).
Add one cup flour to the honey mixture, along with baking powder, cinnamon, cloves, allspice, nutmeg, and salt. Stir well. Add flour gradually, stirring until a soft dough forms.
Here’s the dough ready to roll.
Roll the dough into balls and flatten slightly. We use a cookie scoop to keep them mostly all the same size. Refrigerate for at least 2 hours (or overnight) to let the flavors develop.
Place on baking sheets.
Bake at 350F for 10 to 12 minutes, or until the edges are just golden.
Let the cookies cool completely on a wire rack.
In a small bowl, mix the icing sugar with milk or lemon juice until smooth. Brush the glaze over the cooled cookies and allow it to set before serving. Or you can spread melted chocolate over top. Either way they are delicious!

2-3 tablespoons lemon juice
