It’s Day 10 of the 12 Days of Cookies!!
Today’s cookie is Holiday Wow Butter Cookies.
I love these cookies! They’re a soft cookie with a tender crumb and just the right amount of no-nut butter flavor! These delectable cookies are buttery, flaky and the chocolate chips adds that bit of chocolate that makes these cookies extra delicious while the candy coated chocolates (in Canada they’re Smarties!) adds that touch of festive color!! Simply perfect for the holidays!
Of course you can substitute the wow butter for peanut butter or any nut or seed butter of your choice! I am using wow butter because it has that flavor that is similar to peanut butter and bakes well in cookies since my daughters have nut allergies. And I have grown to really enjoy wow butter!
Let’s get started!
This is the nut-free butter I am using. It is my favorite no-nut butter to bake with and has a great flavor, but you can use any nut or seed butter you like.
Cream butter and nut or seed butter together until creamy. Add both sugars and cream well.
You can also add one sugar at a time and beat well after each addition. I always add both sugars and beat well with the spoon. Once creamy, we are ready to move on.
Add egg and vanilla.
Cream well.
Add one cup of the flour and mix well.
Add the remaining flour, white chocolate chips, semisweet chocolate chips and holiday candy coated chocolate. Adding a bit of flour along with the chocolate will help the chocolate chips distribute more evenly throughout the cookies. Stir well.
The dough should be mixed well, have chocolate scattered throughout and ready to be scooped.
Scoop with a cookie scoop and place on cookie sheet. You can also scoop, and roll the cookies so the cookies have a more rounded edge to them. Roll the cookie in granulated sugar. Slightly flatten with the tines of a fork by making a waffle imprint by pressing the fork in one direction, then the opposite direction. You can also just press the fork one way. We made both patterns in the cookies.
Scoop all cookie dough, roll and slightly flatten with the fork until all of the cookie dough is done. I found this makes a lot of cookies, so I placed half the cookies on a parchment lined pan and froze them. Once frozen, the cookies can be placed in a freezer bag and frozen for up to 6 months.
Bake at 350F for 6 to 8 minutes or until lightly golden. Loosen and let sit 5 minutes before removing to a cooling rack. Let cool completely before storing in an airtight container.
The baked cookies can also be frozen for up to 3 months. These are so delicious, it is hard to not gobble them all up right away!
12 Days of Cookies… Day 10 — Holiday Wow Butter Cookies
1/2 cup butter
1/2 cup wow butter
1/2 cup sugar
1/2 cup brown sugar
1 egg
1 tsp vanilla
1-1/4 cup flour
1/4 cup chocolate chips
1/4 cup white chocolate chips
1/2 cup holiday smarties or m&m’s
Cream butter, wow butter and sugars together until light and mixed well. Add egg and vanilla. Add flour and chocolate. Stir well. Scoop onto cookie sheet. Roll in sugar. Use a fork to make an imprint one direction then the other to create a waffle-look.
Bake at 350F for 6 to 8 minutes or until lightly golden. Let cool slightly before removing to cooling rack.
